Last week when we went to eat dinner with Jay’s dad at Velo Fellow, Jay somehow obtained a plastic spider ring.  You know, the kind that becomes boring to regular humans after age 8.  The ring came home with us from dinner, and I threw it away 3 times before I realized it. just. wouldn’t. leave.

Coming Up This Week – A Fun Party Idea

Happy Sunday!  I trust this finds you having a relaxing weekend, maybe making some baked eggplant pasta for the coming week!

This week I’m going to show you several different recipes that come together to make one big, fun meal with several components that can be used for a PARTY.

I’m not going to tell you the main dish until Thursday or Friday (sometimes I get busy, people), but throughout the week I’ll show you the components needed to make this easy, fun, healthy, and FLAVORFUL meal a success.  I hope you like it!   If you’d like to go ahead and start guessing, here’s what the end result will look like!

That’s pretty, if I do say so myself.  Feel free to guess what it is – the winner will get my admiration for having…eyes.

First, I’d like you to go ahead and familiarize yourself with homemade salsa and guacamole – they’re delicious and easy to make, and I’d highly recommend making them for this meal!

Go ahead and invite someone you like over for dinner and drinks next weekend, and we’ll spend the week figuring out what you can make for them!

Planning For Next Week – A Make-Ahead Meal

I like planning.  To a fault.  I also like cooking, to a fault.  The problem with that is that you can’t always plan how much time you’ll have after work, and often I get cravings for meals that take a bit more time to make and simply don’t have the energy to make them on a weeknight.  This is one of those meals.  The baked, spicy spaghetti is delicious every single time and KEEPS really well in the fridge.  When I have the right ingredients I like to make a batch on Saturday or Sunday and then bake it in the oven whenever I need a quick meal during the week.  It’s also a great meal to take to someone who’s sick, just had a baby, or who you feel like you owe a meal because you did something inappropriate at their house after drinking too much Baileys.

Also, there’s sausage in this meal.

A Quick and Easy Side Dish

Weekends are always a great time to make what I call “steakhousy meals.”  Some sort of nice grilled or broiled meat like blackened chicken with bread, salad, some sort of starch, and veggie.  It’s fun and more affordable than going out, and you can experiment with your favorite restaurant flavors!

I made this last week for my mom’s birthday – it’s so easy and there are no measurements and very few ingredients.  Also, just like with the roasted broccoli I make, this method can be used on any sturdy vegetable.  Be creative!

Ginger Pork

When I was in high school I had a sweet-a** cafeteria that had offerings like ramen (not the 68-cent stuff, massive bowls of noodles, veggies, and pork), curry with beef, mashed potatoes and gravy, fried fish, and spaghetti with meat sauce.

Wanna know the weird thing?

It was all good.  Really good.  

One of my favorite things that the cafeteria offered on a weekly basis was ginger chicken.  Whole, bone-in, skin-on chicken breasts were simmered for hours in a thin fresh ginger-soy sauce and it. was. amazing.  Everyone loved ginger chicken day!

I, uh, borrowed this sweet Japanese cookbook from my mom – she took a cooking class from the author when we moved to Tokyo and learned to make some fabulous dishes from it!  I use it often, and the ginger pork recipe is one of my favorites – I’ve used it on chicken too, and it tastes just like high school!

Braised Bok Choy

There’s a restaurant in Tokyo (is it still there? anyone?  nope, it isn’t.  I Googled it.  ) called Fujimamas that is amazing.  Was amazing.  That’s all.  It served Asian Fusion food with a Japanese emphasis (duh) and was one of my favorite places to go growing up.  One of my favorite dishes was grilled shark with baby bok choy and avocado and WHOA was it good.  I’m not actually sure I ever ordered anything else there, come to think of it!

Fujimamas is one of my first memories of eating bok choy, and it was a great decision each time I ordered the dish.  I got some baby bok choy from the farmers market a few weeks ago, and while I didn’t try to recreate the dish, I did try to recreate the flavors of the sauce with the veggie – this is spicy, easy, and super healthy!

I Wish I Was This Clever

A woman and a man are involved in a car accident.

Both of their cars are totally demolished but amazingly neither of them are hurt.

After they crawl out of their cars, the woman says, “So you’re a man, that’s interesting. I’m a woman. Wow, just look at our cars! There’s nothing left, but fortunately we are unhurt. This must be a sign from God that we should meet and be friends and live together in peace for the rest of our days.”

Flattered, the man replied, “Oh yes, I agree with you completely!”

“This must be a sign from God!” The woman continued, “And look at this, here’s another miracle. My car is completely demolished but this bottle of wine didn’t break. Surely God wants us to drink this wine and celebrate our good fortune.”

Then she hands the bottle to the man. The man nods his head in agreement, opens it and drinks half the bottle and then hands it back to the woman. The woman takes the bottle, immediately puts the cap back on, and hands it back to the man.

The man asks, “Aren’t you having any?”

The woman replies, “No. I think I’ll just wait for the police…”
