We have been having fabulously beautiful weather that just begs for flavors that are a little bolder. After the majesty that was my first go at quinoa, I had some more and wanted to make something a little less summery last week for a healthy dinner. It was quick and easy and turned out great!
Quinoa with Goat Cheese
- 1 lemon
- 1/4 cup pine nuts
- 3/4 cup quinoa
- goat cheese
- 1 medium zucchini
- chicken broth (or just a little more salt, no worries!)
- 2 cloves garlic
- 1 tablespoon olive oil
- 1 tablespoon butter
- salt and pepper
- 1 sprig rosemary or 1/2 teaspoon dried rosemary
See how the zucchini is really crispy in some places? That’s because I let it sit for 2 or 3 minutes to get really brown, then stir it, then repeat. No need to be constantly stirring! Now, turn off the heat. Your quinoa is probably done!
I served this with fish grilled with cooking spray and sprinkled with my blackening seasoning for a super healthy protein, but you could serve this with just a salad as a great, healthy vegetarian meal! It’s earthy and comforting but healthy and full of vegetables, fiber, and protein. Enjoy!
