Weekends are always a great time to make what I call “steakhousy meals.” Some sort of nice grilled or broiled meat like blackened chicken with bread, salad, some sort of starch, and veggie. It’s fun and more affordable than going out, and you can experiment with your favorite restaurant flavors!
I made this last week for my mom’s birthday – it’s so easy and there are no measurements and very few ingredients. Also, just like with the roasted broccoli I make, this method can be used on any sturdy vegetable. Be creative!
For these pictures I was cooking for 8 people, so I used 3 bunches of asparagus, and we ate it all! Use as much or as little as you need, though – it refrigerates very well once cooked and can be used on salads the next day!
