Spicy Bacon Spaghetti

You know how bacon is good on, like, everything?

Well, it is!

I love this spaghetti, and I make it all the time.  The spice and bacon makes it juuuuust special enough that it’s different than regular old spaghetti (nothing wrong with that, though!), and you can throw it together on a weeknight in no time!

Restaurant Review – Lexington Avenue Brewery

A few weeks ago, when we went to Asheville for Jay’s birthday (read about that here), we met my lovely friend Virginia for brunch at Lexington Avenue Brewery.  If anything, our only complaint about this restaurant was that they didn’t open until noon on a Sunday because of North Carolina liquor laws – we wanted to stay there longer!

Cozy and Healthy – Asparagus Soup

Don’t you just love winter and all the cozy foods that go along with this season?

I made this for my sister Emily a few weeks ago because 1. I had lots of veggies, 2. she’s really pretty, and 3. she was feeling sick.  I’m pretty sure soup has some magical healing powers, and I KNOW veggies do!

This is so easy and can be altered depending on what veggies you have and what flavors you’re in the mood for!  It’s very similar to my potato-leek soup – the method is almost identical!

Thanksgiving Recap

Did you have a lovely weekend?  I hope so!

I’ll share lots of holiday recipes as Christmas nears, but, in the meantime, I wanted to share with you some of the highlights of our weekend:

  • Jay stepped in dog poop inside a house (not mine) and threw up.  His 31st birthday wasn’t much better than his 13th, though he did have cake.
  • I made cheesecake, roasted tomatoes, broccoli casserole, green bean casserole, and collard greens.
  • Jay cleaned up the kitchen 93737 times.  He is a saint.
  • I called Jay’s cousin’s husband Hank.  His name is Walt.  His baby’s name is Hank.  I have no clue what I called his baby.
  • Jay’s family told me multiple times that “this was the real thing,” and I got all sorts of weird and commitment-phobic.  I think I’m over it now.
  • Jay and I got fatter.
  • A lot fatter.

Those are essentially the highlights – I’m officially going to eat healthy and not drink AT LEAST until tonight after work.  That should help me lose these ten pounds, right?

Got any Leftover Turkey?

I hope you had a great Thanksgiving!  Did you get any time off?  I had 4.5 days with my family, friend, dogs, and bald boyfriend, and they were all glorious!

I also have gained approximately 19.5 pounds in those 4.5 days, so prepare yourselves for some healthy food in the near future!

In the meantime, though, let’s make something creamy and comforting with our leftover turkey because it’s raining and gross here today!

This wasn’t originally a turkey dish, and I make it year-round with chicken.  It’s a VERY easy traditional southern casserole that can be made well in advance and has about 1,392 variations according to what YOUR grandmother did.  This is how I make it, though!

  5. Indoor plumbing

Things Lindsay is Thankful For:

  1. Bacon
  2. The ability to fry things
  3. Being generally accepted as a fake-Asian
  4. Music and the beautiful people that my work in music has allowed me to meet
  5. Health after a very trying year

My birthday is November 26th and it occasionally lands on Thanksgiving. Regardless of the date my family always celebrates the glorious occasion of my birth on Thanksgiving. As a child I resented the fact that my birthday was a family occasion, and that I didn’t get to spend that special day at a bowling alley or miniature golf course. I now cherish the times when my family gathers and I get to celebrate my birthday surrounded by loved ones.

Healthy Fall Dessert – Apple Crisp/Crunch/Streudel/Bake/Cobbler

Ok, so really I have no clue what any of those dessert names MEAN, but this is baked apples with a crunchy granola-like topping.  It’s healthy, delicious, easy to make, and PACKED with fall flavors!

My mom makes desserts like this with lots of different fruits and they’re great all the time, so this is the best imitation I could come up with.

This is a great dessert to take to people’s houses when you’re totally for realsies over pies – they’re delicious but tend to get overdone this time of year, in my humble opinion.

There are other desserts out there, after all!

Thanksgiving shouldn’t be hard!  People get SO stressed about this holiday (myself included) because there is just so.much.to.do.

I get that, I do.

BUT, it is my so humble opinion that people make things harder on themselves than they really need to by insisting on making everything themselves and ON THANKSGIVING.

Thanksgiving is for giving thanks and getting drunk, people.

Not slaving in the kitchen.

A No-Stress Appetizer for Thanksgiving

  • Like to have good appetizers on hand
  • Don’t like to put forth much effort for said appetizers
  • Have random bread bits in your freezer at all time
  • Hate good photography (I was in a hurry, sorry)
It’s also good for you if you like delicious buttery, lemony toast for a fun twist on a regular cheese plate – you’ll love this!
