Given that it’s Monday and the holiday pounds are SETTING IN (no, just me?), I think it’s time to get a head start on our New Year’s resolutions and working on making healthier food choices BEFORE 2012 is upon us!
Jay’s funny-as-heck comedy buddy Tony and his pretty wife Katie are working hard to get healthy to avoid a few health issues, so we’re working with them to create delicious food that can be low in calories, salt, and fat – things we should all be avoiding this time of year!
Salt and sodium are one of those icky things that we need a little bit of, but in large quantities can mess with all sorts of vital bodily functions like, you know, blood pressure and little things like that. As Americans we are constantly told that we eat too much salt, but processed foods and restaurant offerings make it nearly impossible to avoid those high numbers!
One way to avoid needing to use tons of salt is to use SPICE – get your flavor from plants with crazy good flavors instead of plain old salt!
For this variation on Blackened Chicken, click here to see my recipe for blackening seasoning. Follow all the instructions, but leave the salt or seasoned salt out of the spice mixture. If you like things spicy double the cayenne pepper.
Instead of salt, serve the chicken breast with lime wedges – citrus is a great alternative to salt since it hits some of the same taste buds and tricks the tongue into thinking you’re getting some salt!
Family members not avoiding sodium to the extreme can add salt at the table – it’s important to support our loved ones as they try to get healthy!
