Here’s the basic recipe I use for fried rice. It can be varied several different ways depending on your taste, but here are some of my favorite ways to reduce fat and calories:
- Swap the 2 eggs for 2 egg whites and 1 whole egg – you won’t notice the difference!
- Use cooking spray to cook the veggies and 1 tablespoon light oil and 1 teaspoon sesame oil – that’s it!
- Go vegetarian – skip fish or meat and make sure at least 1/3 of each serving is vegetables – more if you want to lighten the calorie load even more!
- Bonus – use brown rice instead of white for even more nutrition!
You’ll love this just as much if you know you’re not filling up on, well, rice that’s been fried. The flavor will still be great and the variation options are endless.
