We ARE, however, abstaining from eating meat for the next 30 days for an addictions class I’m taking. We contemplated giving up alcohol for about 5 seconds but realized we didn’t want to break up when I started getting she shakes so…
Meat free it is!
I’m excited about this because there are tons of things we love to eat that don’t involve meat, AND there are some meat-free dishes I’ve been wanting to show you!
I’ll still post some meat-inclusive dishes that I’ve already cooked, eaten, and photographed but don’t worry – I won’t cheat!
Here’s one of the first meat-free meals I want to eat – it’s one of my favorites!
I’m going to make quinoa with goat cheese and zucchini, and stir in some spinach at the end for extra nutrition.
I serve this with blackened fish – feel free to add that to your meal if you’d like some extra protein!
For me, though, I’m going to make really basic vinaigrette and serve it on top of greens and tons of fresh veggies.
In planning meals for the upcoming weeks I haven’t felt overly sad about missing out on meant EXCEPT bacon, which just GOES with the Super Bowl, doesn’t it?
We’ll see how this weekend goes…
