This is what I made to go with it!
It’s good too, but not cheesy. It is easy, though, which rhymes, so I’m ok with it.
This super simple side dish can simmer away on the stove while you make the spatzle – it’s tangy and sweet and crunchy and you’ll LOVE IT.
Here’s what you need:
- 1/2 cabbage
- 2 medium apples
- 1/2 cup sauerkraut
- salt and pepper
- chicken stock or water, for simmering
- olive oil
The ingredients are so simple and fresh and I love it!
First, thinly slice the cabbage and core and slice or chop the apple – I leave the skin on because it’s yummy and healthy, but you can peel your apple if you’d like to.
Heat a pan to medium heat with a drizzle of olive oil, and add the cabbage, apple, and a sprinkle of salt.
Use tongs to toss the veggies around and let them soften for about 10 minutes, stirring occasionally. If anything starts to stick to the pan, add a splash of stock or water and stir that in.
Nice. Once the cabbage and apple have softened, drain and add the sauerkraut and stir it in to heat through.
See how nice and wilted the cabbage is? That’s great. Stir the whole thing all together and marvel at how pretty and tasty it is.
Mmmm. You could also add some crushed red pepper to this so you’d have a spicy/sweet/salty concoction. THAT would be great.
Serve this with spatzle for a lovely light meal. Enjoy!
