Ohhhhh man, do I love Indian food.

You know that, because I’ve already shown you chicken curry, which I love just as much as this.

This uses the same curry paste, which is super duper handy because you can make several different varieties of curry at the same time and have a theme night!

I love theme nights.

This is one of the best things I’ve made in a LONG time – no joke.

Since I cook all the time and generally like all the foods, I think that says something!

If you are all into the refried beans that we made earlier, this is a perfect dish for them.  It’s easy, healthy, and meat-free while still being heavy enough for meat-eaters.

Y’all have been to PF Changs, right?  The authentic Chinese restaurant?

Not.

My friend Sara asked for a version of these, and I was happy to oblige – I love PF Changs’ lettuce wraps, even if they are microwaved in a NASA-approved food-system bag.

I love microwaves, too.

Anyway, this version of lettuce wraps is quick and easy, and you can substitute meat, tofu, or extra mushrooms in the filling to suit your dietary needs and the contents of your refrigerator!

Amazing Fish Stew – Cioppino

THIS was epic.

Have you ever had fish stew?

We did, on Valentine’s day.

Yep, it was perfect.

Tomatoes, wine, fish, clams, SAFFRON, bread.  Ahhhhhhh.

This is easy, people.  The sauce simmers for about an hour so it isn’t ideal for a hasty weeknight, but the steps are very simple and the ingredients are interchangeable based on what you have in your fridge, as per the usual.
