Remember how I told you that I travel lots in the spring for a second job that I have?

I definitely did tell you that.

I produce college a cappella tournaments with a company called Varsity Vocals. It’s super cool and dorky, and allows me to travel to several different campuses each year and meet tons of fabulous singers!

Today we’re traveling again! We’re going to NYC for the final event of the season.

This is just the loveliest, and totally customizeable.

Like…everything else I make, because I don’t believe in rules.

No, but seriously. All the farmers markets are opening this time of year, and this is a great way to get lots of veggies into a lovely, creamy risotto!

I believe strongly in shopping and eating locally, when possible, and spring and summer are AFFORDABLE times to do that!

I also believe in using food trash to make homemade vegetable stock, which is featured prominently in this dish!

If you don’t have any homemade stock you can of course use chicken or vegetable stock from the store in this recipe – don’t worry!

Whatever cleaning goes on on the planet, women do 99% of it. But see, women are not as proud of their 99% as men are of our one! We clean something up, we’re gonna talk about it all year long. It might be on the news, you don’t know. A woman could be out re-paving the driveway. Men actually have enough gall to walk out onto the porch and go “Hey baby? Man, it’s hot as hell out here! Look, don’t worry about emptyin’ that ashtray in the den, I done got it, all right? Did it for you, sweet pea. I’m gonna take a nap now.”
