It’s spring break for Greenville County Schools this week!

That means nothing for us, but it’s also Easter week, which means that lots of people are travelling.  If you’re NOT off work, you might still like to have some people over for dinner without breaking the bank on ingredients or breaking your back to get dinner on the table!

Here’s what I’d suggest for a great, easy, affordable meal to serve to your easter bunnies this week:

Pork with tomato cream sauce, mashed cauliflower, salad, and bread.

First, make the fastest vinaigrette ever to go over any veggies, greens, or salad mix-ins you have.  Anything works!  If you don’t have any dijon, don’t worry:  just use oil, salt, pepper, garlic, and citrus juice or vinegar – whatever you have!

While you’re getting the salad together, start some cauliflower and let it steam while you get the rest of the meal ready, then mash it all at once to serve with your pork!

After you start your cauliflower start some garlic bread too – it can warm in the oven while the cauliflower cooks, the vinaigrette marries, and you get the meat ready!

Now, get some meat (I like pork chops, but chicken or fish would work great) seared in salt an pepper and make a quick and easy tomato cream sauce!

Finally, toss your salad (um.), get the bread out of the oven, mash the cauliflower, and SERVE!

You could probably make this dinner in 45 minutes with some time to yell at your dog and drink 5 glasses of boxed wine.
