Hurray for Friday!
We have big weekend plans that include 2 mother’s day dinners, a wedding, a hike, church, and zero sleep, cleaning, homework, or relaxation.
AND, we might be moving into our new house next weekend!
So, we won’t be packing either.
You know that I think cooking for someone is one of the best ways to show them you care!
It also counts as a “gift,” in our family, so I get myself off the hook a lot on that one.
Here’s what I think would make a lovely Mother’s Day meal, no matter when you celebrate! It’s kind of Italian-y, super easy, and kind of fancy.
But not so fancy that it doesn’t go with boxed wine.
Start off with some crazy easy caprese skewers. They are delicious and lovely to look at. Serve them with any pickles, olives, or prepared spreads you have in your fridge. Add some crackers and cheese if you’re feeling super snack-tastic.
For a first course OR a vegetable served alongside the main course (I don’t know how you like to eat your food, ok? Make up your own mind.), make your own vinaigrette and serve it with plain greens, chopped herbs, nuts, and fresh black pepper. Delicious!
For the main course, make a risotto. It’s what we’re making tonight for Jay’s mom, aunt, and Nanny! It takes a little while, but is so easy that you can chat and tell your mom over and over again how cool she is while you’re stirring.
This sundried tomato risotto is my favorite, ever.
Top the risotto with some toasted pine nuts and fresh herbs, if you have some!
To go alongside, serve a nice piece of grilled fish or chicken, or dredge it so you have a light crust, like in the picture above. Just dust it with flour before cooking it. Any meat you’d like to serve is lovely, and you can serve it with some lemon wedges to brighten up the flavors of the whole meal.
For dessert, I’d vote more wine, fruit, and chocolate, but that’s just because I’m not overly talented at baking.
Or kayaking, but that’s a story for another day.
If you want to be super duper fancy schmancy, you could make crepes for dessert! You can make them all ahead of time and serve them with sliced fruit, chocolate sauce, whipped cream, cinnamon butter….anything you like!
Definitely still serve more wine, though.
