Use goat cheese.
It’s SO good, and you still have a great Italian vegetarian meal.
But with goat cheese.

Make the recipe just like normal, but put goat cheese over the breaded eggplant instead of mozzarella.
Or you could use a combination of the two.
Either way, broil the eggplant until the cheese is slightly browned on top, then serve with marinara and fresh herbs.
I love spreading the marinara on the plate first, then stacking the crispy eggplant on top, then sprinkling everything with herbs and olive oil.
