I want to eat Mexican food all the time. Is that so bad?
No, it’s not at all.
It’s the sour cream that gets me. I like it A LOT.
As a result, we eat Mexcan-style food at our house all the time. You can go traditional, light, spicy, vegetarian…there are so many ways to mix it up!
So, tonight, I suggest that you make a Mexican-style meal of stuffed peppers, rice, and beans.
First, select a stuffed pepper. You can go super easy and delish with this 4-ingredient beef and cheese version…..

…..or you can lighten things up with this stuffed corn pepper. Leave the chicken out for a vegetarian take!

On the side, make some rice. I like red rice with tomatoes and taco seasonings….

….but I also like green rice with spinach, cilantro, and lime. You’ll have to make the tough call of what to make!

Then, pick a bean! Refried beans from a can are totally fine, or you can make your own!

Or, how about some black beans with jalapenos and curry? INSANELY good.

Now that you’ve got your basics, shred some lettuce, dice some tomatoes and onions, and open some sour cream and pickled jalapenos. You can go all out and use fresh cilantro, too!
If you’ve got a little extra time, whip up some salsa and guacamole to serve with the meal and before with chips. YUM!
