Need a five-second appetizer to take somewhere this weekend?
Ok, more like 20 minutes, but a lot of that is baking time, so you can totally do other things.
Anyway.
These are BLT skewers!
One bit of bacon, lettuce, and tomato all at once. On a stick. Minus bread and mayo. HURRAY!
These are totally delish.
You need:
- cherry or grape tomatoes
- bamboo skewers
- lettuce
- bacon.
Duh.
Now, I like to bake the bacon in little folded packages so that it’s nice and neat when I’m ready to skewer it.
So, preheat your oven to 400F!
This was long thin bacon that I cut in half, but after some thought I decided I’d prefer it in thirds.
So, cut the bacon in thirds, then fold each third of bacon in THIRDS again, so that it’s a nice little package.
Lay each bit of bacon on a baking rack fitted inside a baking sheet or a broiler pan – the fat will drip away this way. Then the bacon will be healthy!
Syke. Sorry. Anyway.
Bake the bacon for 20-30 minutes until it is cooked but not crispy – still a little chewy in the middle so it doesn’t break as you skewer it.
Now, it’s time to assemble!
Thread on a tomato….
….then a little bit of lettuce folded neatly over itself for easy skewering….
….then finish with a little bit of bacon!
Cute. Easy. Fun. You can make these way ahead, too, and keep them in the fridge until you need them!
Oh, AND. Remember when we made caprese skewers and served them in fun vases filled with dried beans and rice?
You can totally do that here. It’s pretty!
Also, now I have 5-bean soup in a MAJORLY large quantity, but that’s another story.
