Tomatoes and Feta

Isn’t this just the best time of year for produce?

It’s also the best time of year for excess carb consumption and day-drinking, if you lived the weekend we lived, but that’s another story.

Produce is what we’re really all about.


This is just SO easy, but could EASILY be a quick dinner with some grilled shrimp and bread – so easy and fast!

Here’s what you need:

  • 4-5 ripe tomatoes
  • crumbled feta (as much as you’d like)
  • olive oil
  • salt
  • pepper

DUH.  So easy.  To fancify things, feel free to add thinly sliced onions or fresh herbs but….you totally don’t need to.

This is just so perfect!

I like to serve this on a flat plate so that each of the tomatoes get seasoned nicely.

Just slice the tomatoes, drizzle them with olive oil, sprinkle on some salt and pepper, and dump cheese over the whole mess!

YES, PLEASE.

    Sprinkle your favorite vinegar (I use balsamic) for a zing. ‘Maters are post probably my favorite food. I miss picking them every day – store-bought doesn’t taste as good.

      Totally agree. We’ve been having some fab ones from roadside stands recently! It’s definitely the best time of year.
