Also, it’s gray and chilly here, and all I want to do is cook and eat cozy foods.
Over the weekend I made this potato-veg soup for my little sister. She is away at college, so I sent a bunch home with her to eat in between pizza binges. There are some leftovers, and I can’t wait to slurp them down. The soup is insanely easy, and I didn’t have any asparagus – just use whatever veggies you have on hand! Broccoli and zucchini work especially well.
In REALLY cozy food, though, there’s this super easy and spicy gumbo….I just love it, and I have a ton of okra in my fridge right now that might get made into gumbo asap.
I’m torn, though, on what to do with the okra. While I love the plain gumbo the way my mama made it above, I also really like this gumbo risotto….it’s just a teeny bit fancier and SO delicious.
