Guys. It’s Thursday but I don’t have to work tomorrow.
SO IT’S KIND OF LIKE FRIDAY!
Also. After work I’m tasting wedding cake with my mom, sister, and Jay.
So, I don’t have to work tomorrow, and I might eat cake for dinner.
Everyone has to eat dinner, right?
In the event that you won’t be eating cake for dinner tonight, may I suggest this?
Wilted Spinach with Raisins and Pine nuts with couscous.
I made it the other night for dinner, and it was SO good. I mean, delicious. Also, I used the kind of couscous that takes 5 minutes to cook, and the spinach takes c. 30 seconds to make so….it was nice and quick.

Then, for the couscous, I just stirred in some stuff that I like. Feta, capers, parsley, salt, olive oil, and cubed crisped salami that I cooked just like bacon because….I wanted a very-close-to-vegetarian-meal? I don’t understand me sometimes, but it worked really well.
We ended up with tons of veggies, a little starch, and a little protein. YUM.
Couscous or barley or quinoa are so easy in this way – mix in whatever you’d like, and create a side dish that could easily double as a meal! I love throw-together meals like this that are SO delicious but simple.
Perfect for a cake-tasting Thur-Friday.
