We need to eat more veggies, people.
At least that’s what they tell me.
I like veggies but, um, sometimes I wish they tasted like wine and cheese. I’m such a brat, though.
In case you missed it, this morning we talked about a lighter alternative to mashed potatoes – turnips! They’re light, so flavorful, and GREAT with some brown butter drizzled on top.
We ate them last week for dinner with 2 other veggies – braised turnips and roasted carrots with dill. I’ve showed you both of those recipes before (hit up the links at the bottom of this post), but the three together were SUCH great dinner. You could add some bread if you wanted some more calories or a carb, but we just ate these three things and it was SO delish.
We also ate only these three things because we went to happy hour before hand and ate mussels and bread, but that’s not really the point, is it?
