This weekend I was really lucky to have an impromptu family reunion with my dad’s side of the family in Durham, NC.
More on that later, promise. It was a good one.
Anyway, during the course of the weekend my cousins told me that they read this here little blog, but can’t cook. My cute cousin Clare admitted that she recently set her kitchen on trying to make boxed pasta salad so…..that’s not good. They’re my blood, and we need to fix this.
So, I promised that we would showcase a few easy-peasy recipes here today that even the flaming-kitchen cooks could handle. These recipes are fast, easy, and foolproof.
First, and I’ve showcased it before, hibachi shrimp. So easy, incredibly delicious, and REALLY tastes like the stuff you get at random fake Japanese restaurants. You heat a pan to medium-high, dump in the shrimp, cook it until it’s halfway pink, pour over some drops of soy sauce, cook it 1 more minute to let the soy sauce crisp a little, and BOOM. Shrimp.
This salt and vinegar potato salad. It’s vegan, too! There’s no “sauce,” and very little chopping. The seasoning comes from vinegar, salt, pepper, and olive oil, so the flavors are simple and the ingredients are cheap. Try it. Love it. Make someone else make burgers.
Antipasto – this isn’t a recipe, but it’s a fun idea for entertaining or a meal. Get some cold cuts, raw veggies, good olive oil, and bread. Find some pickled anything-you-like. Put it on a plate. Add wine. Could it be any easier, and does anyone NOT like this combo of foods? Seriously. Delicious.
Portobello burgers. These are great for vegetarian/vegan folks, but really delicious even for meat eaters. There’s no molding of meat, no temperature checking, just a quick grill to char the outsides, and serve with your favorite burger toppings. I love these so much!
Lemon pasta. This absolutely one of my favorite meals on the earth, and it has 10 ingredients. One of them is salt. You’ll love this, especially this time of year. Yum!
Cucumber dill pasta salad. Had to include this one for my cute cousin. I love this side dish this time of year, and it always gets eaten REALLY fast at potlucks. Try it at your next cookout!
Tomatoes and feta. I’m embarrassed at how easy this is, but it’s just so dang delicious. You could serve this over any salad greens and call it dinner. YUM. I might do that tonight.
