I think we should only grill our food tonight, ok?

Tonight, though, let’s grill! I was really excited last week when you liked these cute little grilled carrots, so I thought that could be a starting point for us. Whatcha think?
Let’s start with the protein – barbecue chicken or tofu. Chicken will take 20 – 30 minutes if it’s bone-in, and 15 or so if it’s boneless/skinless. Plan accordingly. Tofu will take 15 – 20 minutes to grill. For either that you choose, drizzle with olive oil and sprinkle with salt and pepper.
Make your own barbecue sauce like I do here, or grab a bottle of your favorite kind. It’s up to you!
Prep the potatoes by microwaving them for 5 minutes to get them started cooking, then cutting them into big slices. Drizzle them with olive oil and sprinkle on salt and pepper, too!
For the carrots, prep the glaze, and scrub the carrots. That’s it!
Now, if you have a large grill, these things will all take ALMOST the same amount of time. Throw everything on the grill at once, then when each item gets done put it on a platter, then serve! Grilled food doesn’t have to be piping hot – room temperature is perfect!
If you have a smaller grill, I’d suggest doing the potatoes first, then keeping them covered on a plate with tin foil, then cooking the carrots, covering them, then cooking the protein last so it’s still hot when you serve.
For the protein, whichever you choose, cook it for 10 minutes, then brush barbecue sauce on it for the remaining cooking time. We don’t add the sauce right at the beginning because then it would burn and then everything would be sad.
Now, if you’re one of those freaks who insists on something green at each meal, why not make THIS really simple salad – throw in whatever you’ve got, dress it with salt/pepper/oil/citrus, and call it a day.
This is a great meal, guys, and SUPER healthy. You can of course grill any veggies you like, and the combo of the barbecue sauce with potatoes is just…YES.
