That being said, we’ve still gotta eat this weekend, right?
In celebration of HOW FREAKING DELICIOUS this attention-grabbing chile rice is, I thought I’d toss you a meal with it sort of as the highlight.
Sort of, because there’s slow-cooked tender buttery beef too so…..sort of the highlight.
You most definitely need to start these short ribs for tacos the day before – if you can.
You can make the rice in advance too, then just bake it right before you eat.
Also, make some salsa the day before.
On the day of, make some guacamole if you’re into that kind of thing.
Then, gather any chips and raw toppings you like – chopped onion, cilantro, shredded lettuce, olives, jalapenos….YOUR CHOICE! I love choices.
