We have the BEST week coming up. Tomorrow our bud Rory is coming to stay for a few days, then we have the whole weekend together, then Tuesday is Jay’s birthday, then IT’S THANKSGIVING and we have three of those so…..I feel kind of preemptively fat.
If that’s a thing.
So, for funzies, because it’s HUMP DAAAY, here are some ideas for vegan AND raw options for the coming days, in case you’re interested in kind of a detox before the insanity of next week sets in.
I’m just going to be eating cheese nonstop, but whatever. I also nothing about raw diets, so DON’T think of this as some kind of medical advice. It’s just….some thoughts. I don’t know if you’re allowed to use salt or olive oil or stuff like that, so if you’re legit going raw you should probably not look here for instructions.
For an an appetizer, peach pico de gallo or guacamole are my favs. I make my guac with some pickle juice, but you can leave that out! No one has to know. Then, gazpacho! I love this SO much. Even in cold winter months, I DON’T CARE. It’s delicious. So there.
This asparagus pesto is raw, too! Just don’t toast the nuts and you’re good to go. If you’re legit eating raw you clearly won’t be eating this over pasta, but you could toss it with veggies or even use it as a dip!
Winter salad with walnut vinaigrette. Don’t toast the nuts, again. Or do, no one has to know! This salad is YUMMY, and totally vegan/raw. Do it.
Banana ice cream! We need dessert, people! I still can’t get over how this one-ingredient creation just WORKS. Can you eat frozen things if you’re going raw? I have questions.
