I’m using our pretty loosely here. Do you ever do that by accident? You like something a lot, so you make it/do it/go there a lot, and then are all “oh yeah, the sex and the city tribute museum is one of OUR favorite places!”
And your poor significant other just kind of goes with it.
Anyway, I don’t think this is quiiiiiite that bad, but maybe. I love this breakfast, and so I make it all the time. I have no clue how Jay feels about it, but he scarfs it down pretty quickly so…we must be doing ok.
Since our schedules have shifted somewhat, we get to have breakfast together a few mornings a week. It’s GREAT, and has forced us to try to eat yummy healthy things each morning, even if we eat like shit the rest of the day – feels good to make a good start, right?

These photos are of a large breakfast we had last week on our snow day. Usually we don’t eat this much, but this served as breakfast and lunch so, there you go. On a regular work morning, 1 piece of toast with half an avocado smushed over top and a piece of fruit with some carrot juice (we love it! or at least I do) is perfect.
For two people, one avocado is perfect. I mash it in a bowl with a fork and a sprinkle of salt. Sometimes I add a little lemon juice, but usually plain is all we need. THIS DAY, though, I crumbled some goat cheese in right at the end. Avocado with goat cheese and coarse salt. BE STILL MY HEART. Also, a little fancy olive oil over top is fabulous.
I don’t like eggs, so when I find a brunch place that offers side salads with breakfast I get all hot and bothered. Breakfast at restaurants is either egg-centric or sugar-centric, don’t you think? I’m not huge into sweet breakfasts, OR eggs so…salad and bacon is kind of my jam.
And here’s Jay’s. HE loves eggs. Especially when they’re basically raw. I with I liked eggs – it seems like this would be a good place to start with something oozy and creamy, right? I just can’t do it.
