This is the week!
The week I take the exam that determines if I get to pursue licensure as a counselor.
Not nerve-wracking at all! Basically I’m spending every spare second studying, and trying to keep up with the 9,282 other things that we have going on while not screaming at anyone, staying up all night, or just breaking down in tears.
No one likes that girl.
On weeks like this, I do LOTS with leftovers and random bits of nonsense that we have hanging around our house, but I also like to have an arsenal of ideas in my brain to create balanced, healthy, FAST meals.
Here are some of my go-tos.
- Salad with every raw veg I can get my hand on, plus a little cheese and maybe sliced turkey or salami. Bonus points if you have some dressing in the fridge, but lemon juice, salt, pepper, and olive oil drizzled right over top work great.
- Grilled veggies and cheese. I make a regular grilled cheese, but on the inside put spinach, kale, tomatoes, fresh herbs, ANYTHING I need to get rid of and like with cheese, which is basically everything. Grilled cheese takes less than 15 minutes to eat, and you can justify butter, cheese, and bread with veggies in the middle of it, yes?
- Nicoise salad, the short version: Greens, and any raw veggies you like. Canned, drained tuna, sprinkled over top. Capers all over. Microwave some baby potatoes for 6 minutes until cooked through, cut into cubes, throw on top. Drizzle with lemon juice, olive oil, salt, pepper. If you don’t have time for the potato step just serve with some crusty bread!
- Cooked quinoa mixed with chopped raw veg – chop it small so you won’t have any weird tough bites! I love chopped cucumber, onion, carrot, and bell pepper. Toss with some parm and olive oil, then season with salt and pepper to your taste. You can keep studying while the quinoa cooks so you aren’t wasting any time.
- Cook some long pasta, and while it’s cooking very quickly saute some veggies in a little bit of oil, or microwave them until cooked for even faster work. Add the pasta and veggies together with a tiny bit of garlic and soy sauce, and STIR FRY PASTA in 30 minutes or less.
Those thangs are delicious, but I’ve got a whole week to get through. What are some of your favorite pantry staples and toss-together meals for weeks like this?
Also, can anyone sell me a time machine so I can go back in time and learn better study skills and work harder and feel like a competent therapist?
