So, I’m catering a little lunch tomorrow, and a little lunch on Tuesday, and mainly my kitchen is a hot mess.
But but BUT!
For both of the meals I’m making this Greek salad bar that I’ve been selling a TON of this year, and it’s super delicious and healthy and easy to make (even for a crowd!) and people just SERIOUSLY love it.
It’s basically a big Greek salad with some other stuff, so I start with that. Crunchy lettuce, tomatoes, bell peppers, cucumbers, feta, and pepperoncini (those yellow pickled peppers) if you’re into the spice. I also make or buy some kind of vinaigrette – any Greek dressing you like is great, or a light vinaigrette like this lemon one is perfect.
I also grill some chicken. How I do it depends on how much time I have and what flavors I’m looking for, but this honey marinade is REALLY delicious, or you can just sprinkle on your favorite seasoning blend and go to town! Totally up to you.
I buy some pita, and make some dips. Hummus is an always, and tzatziki and roasted tomatoes happen sometimes. The roasted tomatoes are particularly delicious, and people rave about them even though I use canned tomatoes and they just sit in the oven low and slow with olive oil until they’re roasty. Super easy, but TASTY. Add the roasted tomatoes to your arsenal of snacks you know how to make, seriously. They’re the best ever. On hummus, recently I’ve been letting the food processor go for a LONG time to get that really smooth hummus texture. It’s super nice.
Then I just set it all out with some olives, extra feta and peppers, and let folks go to town! Some people build sandwiches with the pita, some people top their salad with chicken and dressing and eat some hummus on the side…you get the picture. The great thing is, you could buy hummus, dressing, and tzatziki (yogurt cucumber sauce) and this whole meal is SUPER simple to prepare.
My point is, this is a weekend for total gluttony if you’re into that sort of thing, but it doesn’t have to be! If you’re doing any kind of an event this weekend, this meal might be JUST your ticket.
