It’s Earth Day!
Now, I know that rain is great for the Earth, but I for one am obsessed with the fact that it’s a zero-humidity 70-degree day in these parts. We had a few muggy days followed by a week straight of rain, and sun just makes me happy, ya dig?
So, I’m happy we’re having a sunny, breezy Earth day, and I fully intend to get outside to celebrate it as soon as I finish these 5,938 things I’m working on.
We talk a lot in yoga about how to appreciate the Earth, but it’s so much more than recycling and picking up trash and using less, which we know we all should be doing. It’s also noticing that the Earth works really well – even when we beat on her over and over again she just springs back and keeps trucking, adjusting to our abuse. It’s something we all might strive for – coping mechanisms for days, this planet has.
You know we have to bring it back to food, so here are some nice healthy light EARTHY veg-focused meals that we’re loving these days. Some are vegetarian, and some are not, and my advice would be that, to the extent you can afford it and make it work for you, meat consumption today might be a little more Earth-friendly if we strive to consume local foods to the best of our ability – lessen the carbon footprint and all that.
