Happy Drinking Day!
Again, no clue what we’re really celebrating today.
I used to seriously date a man who was a … good … drinker, and his birthday is today, and WHOA. There were a few years where this day was all about the food and not about the booze.
But now that I’m older and wiser and more mature, I try to eat a ton of food to soak up all the booze I’m going to imbibe. Smart, huh?
To me, Mexican food (and all food, really), has to be seasonally appropriate. This weather is kind of weird, and it might be cold or hot or rainy or sunny depending on where you live. I DO think that some kind of chip/dip is really appropriate for this day regardless, and I love making my own salsa, guacamole, black bean hummus, or this SUPER American black bean dip that I’ve been making for years. Don’t knock it until you’ve tried it!
For warm OR cold weather, some kind of tacos is always appropriate for this holiday, too. Regular beef tacos are my favorite, or tofu if you’re a vegetarian, and if you have a lot of time you have GOT to try the slow-cooked beef short rib variation. Slow cooked beef short ribs are kind of my life.
Now, for really cold weather. The vegetarian posole from yesterday is an obvious choice, and you can also do enchiladas like this green favorite of mine – I make them all the dang time, and they’re a hit every time.
I don’t know if there is “warm-weather” Mexican food since it’s always kind of warm in Mexico, but I love this chicken taco salad for lighter meals – especially when paired with chips and dip, because #carbs.
