Memorial Day weekend!
Is in 2 days!
We actually have a pretty tame one planned, what with some house projects and a little band show that will take up the entire weekend between the two, but I sincerely hope that YOU have more interesting plans for pool things, food things, beer things, cookouts, and maybe fireworks?
Last year we did fireworks in the street. We are the neighbors you WANT, people.
No matter what your plans are for the weekend, I hope that you have grand plans for some delicious food to kick off the summer. You know, for bikini bodies and all.
We had the meatballs yesterday, and other of my favorite appetizers are these jalapeno bites with bacon, this bacon ranch chicken salad (omg seriously), and the easiest spicy grilled shrimp EVER that is just perfect for the grill.
Then for MEAT. The shrimp above would serve for the non-meat eaters, as would this grilled marinated tofu or mushroom burgers. I also love making a big sub for everyone to grab a piece of, OR making a ton of pulled pork in a big pot the night before and serving it with buns and toppings on the day of whatever event you’re having. Perfect!
At some point we should get to side dishes, which I’m splitting into hot and cold because there are SO MANY that are excellent for meals like this. Let’s start with hot! Fancy pants baked beans, fo sho, or you could go more classic with mac and cheese (leave the chicken out if you’d like) or green bean casserole!
For cold side dishes, a non-mayo potato salad wins every time, as does this creamy macaroni salad, this raw Caesar Brussels salad, or this slaw, or this red, white, and blue salad. It’s not too early to start planning for the 4th of July!
So, there we have it. All the food you could POSSIBLY need for this weekend, plus a few extras to get the summer started with a bang.
