I’ve started to feature some new and old Mexican dishes on my Insta, and will continue to do so for the next week until the most glorious of all the food holidays. It’s still kind of chilly in some parts of the country, so a fun soup + chips + beer might be your tickets for next weekend.

You could make tlapeno, chicken + rice soup that might be of my favorite recipes of all time. My former neighbor’s Mexican mama taught me how to make it and I just adore it.
Vegetarian posole is another favorite of mine. The texture of the hominy makes the lack of meat no big deal at all, and the flavor is so, so good. Go big on chili paste for this one!
Crock pot chicken taco chili isn’t necessarily traditional, but what is the tradition of Cinco de Mayo? Maybe not as authentic as we think, is my guess. Plus, slow cooker meals are always the best thing ever.
We should just have Mexican every day for the first 10 days of May or something.
