So, a few things happening around here. First, when we were coming back from the beach on Monday a rock (we think) hit our car window and shattered it all over Beck while we were driving. We thought we had been shot because we watch too much television, and there was a legitimate moment where I didn’t want to turn around to check and see if Beck was ok. She was, of course, but she DIDN’T WAKE UP at the noise, so I assumed certain death. Not recommended. I’m still having flashbacks to the moment, even though it turned out to be a fluke accident and nothing like our imaginations took us to.
Also, the sky is literally falling in a few parts of the world. I cannot imagine what our neighbors in Houston, Florida (in preparation), and Asia are feeling and experiencing, and this list of soups is definitely not a fix for any of that.
Finally, it is raining here. It is dreary and not supposed to stop all day and night, chilly, and dark. Beck is whiny and needy and bored while being adorable, somehow. So I’m contemplating dinner, as I do at 10am, and I’m thinking it has to be soup. For us it has to be soup using ingredients we have, because we are having one of those weird weeks where we have a ton of random produce, one of each kind of deal, and some of it needs.to.go. It also has to be quick, so this isn’t a list of slow cooker meals or chili. This is for NOW.
We have some fresh tomatoes that are past their peak, so I’m thinking this great blender tomato soup might be in order. Jay is eating fewer carbs right now, so more croutons for me! I have a tomtato curry soup on the site too that is SO good. It’s pictured ^^ and is topped with crispy chick peas for health purposes.
Another low carb option is this cabbage beef soup that I made recently – we GOBBLED this up and didn’t feel heavy or over-full when the soup was gone.
I also have been really into Thai-style soups recently. Most restaurants have a brothy and creamy version, and they both taste strongly of garlic, ginger, lemongrass, and chili. I LOVE them, and making them is fun because you can throw in any protein and veggies you have and call it dinner. Also on the Asian-style train, quick weeknight ramen is one of the best things I make in the World according to me, and this super light ginger lemon soup with soba is wonderful for late summer colds.
Yellow curry is also playing a strong role in our kitchen recently, I’m suuuuuper into the flavor. This soup with rice and tofu and greens is so easy to throw together and really comforting.
Loaded baked potato soup remains one of the top recipes on this site, year in and year out, and for good reason. COZY.
Buffalo chicken soup is great for football days where you don’t want to slave over chili for 9 hours!
Super quick broccoli cheddar soup is one of the first things I made after I had Beck; it uses broccoli slaw and very little brainpower to pull together. Busy parents, working humans, ~bring me~ your tired, your poor…it’s perfect for everyone, and vegetarian! And, yes, you serve the broccoli cheddar soup topped with more cheddar. …low carb?
Mexican style soups are always in my favorites category, and this chicken rice tlapeno is hands down one of my favorite meals to make. This vegetarian posole with hominy is also one of our personal favorites – the flavors are unreal.
