It’s good too, but not cheesy. It is easy, though, which rhymes, so I’m ok with it.
In honor of the second meat-free week, I’m going to show a meal that I love that involves cheese, pasta, and vegetables.
Up first, spatzle.
I made this for Nanny the last time we went to her house, and it was SO easy and quick!
I know most shrimp and grits has peppers, onions, sausage, and a host of steps in the cooking process, but this decidedly does not.
The flavor, however, is ALL there. You’ll love this!

This makes me feel really productive and frugal and domestic, and I like those feelings.
Last week we were short on canned soup, which is a lazy but reasonably healthy lunch go-to for us, so I grabbed a buttload of random ingredients, stirred them into some couscous, and called it lunch.
It was great!
