This is another fake-fancy meal that is just SO delicious. I made it last week after Jay and I hiked 7.2 miles (more on that later), and it was the perfect combination of healthy via the tomato sauce and eggplant and decadent via the breading and, well, bread that I served with it.
This is a pretty one too! It doesn’t take too long to make so you can throw it together on a weeknight or on a weekend when you’re entertaining and want something fabulous that doesn’t require a ton of ingredients or effort!
It can also be ridiculously salty and filled with olive oil so…be careful there.
Hummus is extremely easy to make and I’d ALWAYS recommend making it yourself instead of trusting delis and grocery stores with your fat, salt, calorie, and chemical intake. Hummus lasts a nice long time, so make a double batch and keep it around for dipping veggies – this is a way better alternative than ranch!

I’m not sure where I got this idea, but years ago when my mom was dumb enough to let me start cooking (and created this monster, sorry Mama) I had this thing with chicken and pears. I made grilled chicken and some sort of gravy with pears in a pan, and it was usually pretty good!
I hadn’t made anything like that in years, but we had some brie leftover from our sweet trip to Asheville, and pears are, like, everywhere right now.
So, chicken with pears and brie was re-invented! You’ll love this, promise. It’s fancy. Like me. Not.
