Welp, we have a new ongoing dilemma in the How to Get Married the Wrong Way saga of our lives. 

I don’t know what to do about my name. 

To clarify, this isn’t a REAL dilemma, like “do we pull the plug on our 16 year old comatose daughter” or anything like that.  I’m marrying the best guy ever, we’re super happy, and employed, and healthy so….not a real dilemma. 

The non-dilemma IS ongoing, though.

 I have told you that my beloved recently took a new job – correct?

It’s a great new job.  He’s getting really good at it, but there’s definitely a learning curve, as exists with tons of new jobs.  He’s been away for work 2/4 of the last weeks, so I’m GLAD to have him home.  
 
One challenge we’ve found with Jay working at home that when 1. I walk in, 2. the dogs breathe, 3. someone knocks on the door, he’s interrupted.  He does a ton of conference calling, and needed a good, albeit dorky, headset to block out some of the regular house noise.
 
So I bought him one.

Braised Bok Choy with Fried Tofu

It’s been a while since we’ve had some Japanese food, hasn’t it?

This is kind of weird – it’s totally delicious, but not something you see in the US so….sorry about that.  Branch out.  It’s song-of-my-people type of stuff, because I like to think that I’m Japanese, so you just have to deal with it. Greens with hashi and rice

Also, it’s healthy and yummy so…you can be Japanese too!

My mom used to make this all the time when we lived in Tokyo, and it was a nice kid dish – salty and included fried tofu but made with a whole head of greens.  I loved it, and I still do.  If you leave out the dashi this is vegan, too – otherwise it’s a lovely vegetarian dish that kind of can be a meal.

Oh, and.  5 ingredients.  Massive flavor.

A life SO well lived.

My grandfather died last Tuesday.

His name was Tebo.  Thomas, really, Tom to my grandmother, but Tebo to us. 

The stories on why this is are varying.  I like to think that I named him, because I’m the oldest grandchild, but in reality I think that people called him T-boy growing up/in college and it kind of stuck/evolved into Tebo. 

Not T-bo, T-bow, or Tebow, for the record.  Or T-bone.  This was a source of great confusion for people throughout his whole life.

The Easiest Monday Food

This weekend I was really lucky to have an impromptu family reunion with my dad’s side of the family in Durham, NC.

More on that later, promise.  It was a good one. 

Anyway, during the course of the weekend my cousins told me that they read this here little blog, but can’t cook.  My cute cousin Clare admitted that she recently set her kitchen on trying to make boxed pasta salad so…..that’s not good.  They’re my blood, and we need to fix this.

So, I promised that we would showcase a few easy-peasy recipes here today that even the flaming-kitchen cooks  could handle. These recipes are fast, easy, and foolproof.

Easter Dinner – Whole Beef Wellington

Remember at Chrismas-ish time when I made these super duper cute individual beef wellingtons?

They were so great.

I made a big one!  THAT was great too. 

I actually made this for Christmas with Jay’s family.  They eat beef Tendahhhhhloin (they’re southern, it’s OK) every Christmas, and this was a fun twist on it.  Because…..it has pastry in it.  

It was SUPER easy to make ahead, too. We made it at our house and then just baked it once we were all together.

Finally. A Church That Gets It.

I grew up United Methodist.  Did you know that?  It’s true.  Every time we lived in the US we were a part of a large United Methodist church here in Greenville. 

Currently, the UMC governing laws prohibits clergy from marrying gay couples.  The United Methodist governing body has, to the best of my understanding, simply not addressed the issue at the last several conferences in which a rule like this might be examined or overturned.  

I get it.  It’s a hot-button issue.  

I don’t, FOR THE LIFE OF ME, get why, though.

My little sister turned 18 last week.  She’s graduating from high school in 2 months.

She’s 2 inches tall her than me, and reminds me constantly that she’s nine years younger than me.

She says it like this.  ”Nine…NINE years younger,” whenever I refer to her as my younger sister.

Last weekend we went downtown with her bff Eleta.  Here’s Eleta!

We had a BLAST taking these pictures, and it was totally freezing.  The girls, in their infinite high school wisdom, just HAD to wear skirts.

It was 37 degrees F in the sun.  We shot most pictures in the shade. 

I love these pictures.  I was so excited of how they turned out, which is much more of a testament to how lovely my subjects were!  The thing is, though, they’re not just pretty girls.  They’re smart, and thoughtful, and really kind.  That’s my favorite part about them.

OMG.

Why can’t Valentine’s day be floating?  Like…always the second Saturday of February?  Thursday is a super bummer day for a holiday.  It’s SO CLOSE to the weekend.  But….not quite.

Even so, you might want to make something super delicious yet fast and affordable for the people you love tonight, right?

Enter…..pasta.

It’s just so easy.  And delicious.  And everyone likes it.

Unless they’re dumb, and then you don’t need to be hanging out with them.
