Instead of course I’m juggling 9,439 things with no lunch in sight, but such is Thursday when you hold multiple jobs, amirite?
I read all the time various posts, see pictures, get questions….I’m thinking that you people are eating some boring food?
Maybe not you – maybe some other people?
I don’t know.
I think, though, that since it’s Tuesday and there aren’t any short weeks coming up and it’s getting colder that we should discuss at some length why boring food doesn’t have to be so.
IT DOESN’T! Promise. You can make affordable, healthy, regular meals every night of your life, but with a few teensy changes make them not so standard that you feel sad in your heart and end up getting takeout half the time. Continue reading »
I’m going to the mountains tomorrow!
I’m spending the day getting ready and cooking and packing and I CAN’T WAIT. We’re going with some of Jay’s comedy bffs and one of them has a baby who is half ASIAN which is my favorite kind of baby tied with..every other kind of baby…and he’s going to wear a halloween costume and ALSO we are having Friendsgiving on Saturday and IT’S GOING TO BE AWESOME.
I’m slightly excited. If that was apparent.
Oh Monday, WHY do you exist. Seriously. I have a serious case of the grumps today.
Not really, but I kind of had an epic weekend with so much fun and love and yoga and food and friends so now today is just….omgisitdinnertimeyetandcanwegoonadate? That kind of day. You know.
So, to celebrate Monday, let’s play with carbs! I PROMISE I have some fun new food coming this week that doesn’t involve potatoes, but I’m still kind of in awe of the crock pot baked potatoes that we discussed last week, and also I like carbs so…here are some ideas for what else one might stuff into a baked potato. You guys kind of went nuts with these Sloppy Joes I made a few weeks ago, and, that makes me happy. Because I did to so….we’re bff! Thank G.
I’ve made the mixture a few times since I showed you this recipe, and I CAN’T get enough. You can do anything with it! The flavor lends itself to, um, ANYTHING, so I think we should play around with how dang good this stuff is. I love the rich beefy flavor that comes from the oyster sauce and other ingredients, and I tend to go a little nuts with hot sauce so….just YES.
Since today is Thursday and Thursday just kind of…needs…ground beef, here are some things you could do with the mixture if you aren’t feeling sloppy joes.
You know how sometimes you go to a restaurant and all you want is the chicken finger plate because even though it’s not that good or exciting it’s kind of predictable and sometimes ALL YOU WANT IN THIS WORLD is familiar and predictable so you order it?
Sometimes, though, you just want the dang chicken fingers. Other times, you may want them BUT ALSO want to cook at home and be a little more exciting.
Enter…..dijon-crusted baked chicken fingers with roasted veggies. You still get your chicken finger and potato fix, but with a little extra oomph. THAT’S what you should have for dinner tonight, for realzies.
YOU KNOW WHAT DAY IT IS.
mike Mike MIKE MIKE MIKE.
Sorry. Apparently there’s some kind of commercial relating to Wednesdays. According to Facebook.
It feels like fall here. Does it feel like fall where you are? All of a sudden last weekend evenings and mornings turned COOL, and the air smells better, and EVERYTHING IS GOOD.
I mean, lots of things still suck, but at least we aren’t sweating through it, amirite?
So, tonight, let’s make a meal with seasonally appropriate ingredients! The great thing about RIGHT NOW is that we’re still having a bit of leftover summer stuff AND new fall stuff fresh and affordable. Here’s what I want to be using all the time:
I’m rehearsing dinner today.
Not really, but you know what I mean.
WE’RE GETTING MARRIED TOMORROW!
That being said, we’ve still gotta eat this weekend, right?
In celebration of HOW FREAKING DELICIOUS this attention-grabbing chile rice is, I thought I’d toss you a meal with it sort of as the highlight.
Sort of, because there’s slow-cooked tender buttery beef too so…..sort of the highlight.
I think we should only grill our food tonight, ok?
Let’s do that.
In case you’ve forgotten (like I sorta did), we have a whole page of fun dinner ideas on this site, with timelines for getting everything done in under half a day.
Not really. Usually under an hour.
Tonight, though, let’s grill! I was really excited last week when you liked these cute little grilled carrots, so I thought that could be a starting point for us. Whatcha think?
Are you in a coma from booze/food/sunshine yesterday?
If so, I have exactly the easy-peasy get-back-on-track meal that you’ve been looking for!
We most recently made this meal for Father’s Day – we celebrated at lunch – and it was a huge hit. You prepare a few things, buy a few things, and EAT. That’s it! You customize with what you like/have on hand, and move on with your life.
