This time of year I have this thing where I want to take everyone food but I SERIOUSLY don’t have time to make long-winded appetizers. I love bite-sized food like this because you don’t need fancy utensils or even napkins if you’re careful, and folks can eat 57 and not feel guilty because they’re bite sized. For rizzle.

You absolutely should make this salad this week, and next, and for the entire cold season to offset the mac and cheese.
Trust me. It’s delicious and healthy, so why not? We achieve a creamy dressing with walnuts instead of dairy, and the flavors of the salad with the sweet dressing are just…YES.
I love this salad because the walnuts really give you that holiday feel without tons of calories – this would be a GREAT addition to a holiday table for the health nuts in your life! Or you could make it for lunch today, whatevs.
This actually was a copycat that I CRAVE after long periods away from one of my fav restaurants, Nose Dive. They have a duck mac and cheese with cracker topping, and it’s just SO good. Seriously delicious, and I usually force Jay to share it with me but then eat it all so…awesome.
This version isn’t lighter, but it’s definitely cheaper, thanks to a really wonderful substitute of chicken thighs braised in mother effing butter and chicken stock, and the Cheez-It topping is just….you know.
Now, listen. If you’re a Nips person I suppose that’s fine, but it is my personal belief that this dish is made better by legit Cheez-Its due to their sharp cheddar flavor. If you would like to use another kind of cheese cracker’s I guess we can deal with that. But seriously….try not to be that guy.
I’ve got lots coming up for them, guys. Get out your stretchy pants. Or practice some form of self control, it’s totally up to you.
How was your weekend? I made so many cozy foods and hung out in the mountains with bffs for our bud Wes’ birthday, and it was a really nice awesome epic weekend without too much craziness but just the right amount of fun and beer and friends.

In other news, wanna know what the best thing about teaching morning yoga is? You are ready for lunch at 10am in a RAVENOUS way. Or not.
This side dish, though. It’s NICE. Real nice. It can be used as a side dish, or (spoiler alert) a main dish salad with a few adjustments. The dried cranberries add a great sweetness to balance the bitterness of the eggplant, and it’s EASY. 20 minutes or so, cook some parts while you prep others, that kind of thing.
Also crispy sage so…let’s do it.

I’m sort of … not that obsessed, but there are some lovely flavors associated with fall, and we can highlight them on roasted veggies! Roasted veggies have such a nice earthy quality ANYWAY, so adding some warm spices make them even more delicious.
For our Monday, I’m making you a really bland and colorless side dish.
Just kidding. Colorless, yes, but this is very easy and packed with flavor so….maybe perfect for a Monday?
I made this yesterday for my mama for Mother’s day. What’d you do for your mom? My sister Emily got her a waffle iron and my other two sisters got her some sweet pottery so….my “gift” of dinner was lame, but still kind of delicious.
We hope she had a good time with all of her peeps.
This side dish, though. It’s good. Really good. I’m writing the printable just as I did it, but you could substitute any grains or rice-like things you like: quinoa, orzo, regular rice….anything! Just cook whatever you use separately since the cooking times will be all different, then mix ‘em together at the end.

I’m going to Nashville today with my BFF.
Last year on this same trip we were in a hail storm for about 45 minutes slash what felt like 10 hours.
