This is so delicious! I’m not going to give you any quantities because this is REALLY the easiest throw-together dinner but with magical, wonderful flavors and a perfect balance of carbs, protein, and vegetables. There are tons of ways to change it up, too, so get creative with this layering idea and use it often!
Have you heard of these noodles with very few calories, Shirataki? WELL, the thought of a low-calorie (20-calories per serving or something SO negligible) noodle that tasted normal was so enticing to me that I just HAD to buy some when I saw them in the store.
I like planning. To a fault. I also like cooking, to a fault. The problem with that is that you can’t always plan how much time you’ll have after work, and often I get cravings for meals that take a bit more time to make and simply don’t have the energy to make them on a weeknight. This is one of those meals. The baked, spicy spaghetti is delicious every single time and KEEPS really well in the fridge. When I have the right ingredients I like to make a batch on Saturday or Sunday and then bake it in the oven whenever I need a quick meal during the week. It’s also a great meal to take to someone who’s sick, just had a baby, or who you feel like you owe a meal because you did something inappropriate at their house after drinking too much Baileys.
Also, there’s sausage in this meal.
This is a fabulous, flavorful way to make penne. The long cooking time allows the tomato flavor to sweeten and intensify, and the vodka gives a tang that offsets the richness of the heavy cream.
Oh, and there’s heavy cream in it (see above). Do you need to know more?
Now, I love veggies in all incarnations, but some people don’t. My friend Weston, for example won’t eat anything with onions in it. Ever. At all. The man makes a living picking up roadkill (not really) and testing dead fish for cause of death and algebra skills (totally true), but onions gross him out. Flavorful, lovely onions.
This isn’t a post to bash my friends. This is a post to teach you how to hide veggies from your loved ones so 1. they get some dang vitamins with their cheese and 2. so you can have the veggies you want in your food.
