Broiled Lemon Chicken with Basil Sauce

Oh hi, summer. 

Lemon broiled chicken with basil sauce, gluten free and dairy free.

My basil plant is doing GREAT this year, in a new sunny spot from years past, so prepare yourself for a gazillion “but it’s seasonal” basil-using recipes. You’ll get no apologies from me on that one. 

I’ve been playing around with broiled chicken more, and after a few tries I’m definitely liking the method for a few reasons. It’s super quick and doesn’t smell up the house OR require walking outside to get to the grill, two things that can be a deterrent for me sometimes. This particular broiled lemon chicken is broiled on just one side because the pieces of chicken are super thin. If you don’t feel like cutting the chicken pieces in half (or buying thin-cut chicken) you don’t have to, just flip the chicken and broil on the second side. 

This entire meal is done in half an hour or even less if you make the basil sauce another day as part of meal prep. Let’s do it!

Summer/Fall Dilemma

Hi!  How was your weekend?  We went to the mountains with Jay’s sister, her family, and their dad, and it was really wonderful, in a calm cozy family kind of way.  We ate and drank and played games (I beat a 7 year old at checkers, felt pretty good about that) and fished and there were arms for Beck and it was wonderful!  We also helped a woman having seizures who didn’t know she had a seizure disorder (or something like that), but that’s a story for another day.  IMG_7221

Classic Pesto

For real.

My herbs are sad, folks.

Luckily, though, my grandparents and mother are fantabulous gardeners, and gave me a massive quantity of basil a few weeks ago.

So, naturally, I made pesto.

It’s easy, it’s delicious, and there are SO many things you can do with it.

An Easy Weeknight Dinner

Generally mid-week I start to plan for all the crap I’m going to cook and eat on the weekend, then I feel guilty and cook something healthy.  This is a great light sauce that can be used on anything, but I particularly love the mild flavors with fish.  If you don’t like fish you’re silly and missing out, but you could easily make this with any other protein of your choosing (not beef, that’d be too heavy) or just serve it directly over rice or noodles.  But try it with fish sometime!  You’ll love it.
