Cheesy Baked Chile Rice

Ohhhhhhhh this is comfort food but it tastes like Mexican food and it’s so easy and you can make it ahead and it’s vegetarian but hearty and filling and cheesy. 

It’s great for a Monday, is what that should tell you.Broiled casserold topped with scallion

This rice is all of the things. 

Also, how was your weekend?  Mine was kind of …. rained out.  I had 93737 fun things planned for the sunshine, and then there wasn’t any so….whomp whomp.  

We DID, however, celebrate a full year in our house!  I did 3 loads of laundry to celebrate.  Cool, huh?

Grilled Eggplant and Potato Lasagna

So.

Here’s the thing.

Sometimes I get wild hares (what does that MEAN) up my you know what and do a lot of cooking to have on hand so that some nights when I’m exhausted I can just drink wine and watch crappy TV and not cook.

But then on those nights I end up wanting to cook anyway because it’s the closest thing in my life to meditation and I love it.

So I have all this premade food.

And then I make more food.

And then, I go out of town, and Jay eats enough of said premade food for four dinners for two people in a weekend.

And doesn’t take pictures of any of it.

It’s a rough life, folks.

Tuna Noodle Casserole

Remember in the 60s when people used to make tuna noodle casserole with egg noodles, tomatoes, and tomato chips crushed on top?

Me either.

But, it sounds great!

I was born in the 80s, sorry.

I really love tuna a lot, and I especially love cheesy baked pasta dishes.

This has both of those things!

My sister loves those things too, and she made this!  She just moved into a sweet new apartment downtown, so she made this while I took pictures and instructed.  Now she’s basically a Top Chef.  These are her pretty hands in the pictures!

This also involves making your own cream of celery soup instead of using a can.  It’s easy too!

You’ll love this, trust me.

Isn’t that just the stinking cutest name you’ve ever heard?

This is pasta.

You bake it.

It has all the components of a Philly Cheesesteak, but it has pasta instead of bread.

It has breadcrumbs though, so don’t worry!

It’s like, really, really good.

You can make it ahead of time and bake it later if you want.

Got any Leftover Turkey?

I hope you had a great Thanksgiving!  Did you get any time off?  I had 4.5 days with my family, friend, dogs, and bald boyfriend, and they were all glorious!

I also have gained approximately 19.5 pounds in those 4.5 days, so prepare yourselves for some healthy food in the near future!

In the meantime, though, let’s make something creamy and comforting with our leftover turkey because it’s raining and gross here today!

This wasn’t originally a turkey dish, and I make it year-round with chicken.  It’s a VERY easy traditional southern casserole that can be made well in advance and has about 1,392 variations according to what YOUR grandmother did.  This is how I make it, though!

I’ve been on a vegetarian meal-kick lately, in part because our farmer’s market is so stinking cute and MEAT IS EXPENSIVE.  Srsly.  Also, I’ve been feeling kinda mushy and lumpy and apparently red meat can have a hand in that.

Not fried food.

Not boxed wine.

And definitely not cheese.

I feel pretty strongly that two healthy recipes in a row is a bit much, so today we’re going to explore chicken, pasta, cheese, and HIDDEN VEGGIES.

Now, I love veggies in all incarnations, but some people don’t.  My friend Weston, for example won’t eat anything with onions in it.  Ever.  At all.  The man makes a living picking up roadkill (not really) and testing dead fish for cause of death and algebra skills (totally true), but onions gross him out.  Flavorful, lovely onions.

Anyways.

 

 

This isn’t a post to bash my friends.  This is a post to teach you how to hide veggies from your loved ones so 1. they get some dang vitamins with their cheese and 2. so you can have the veggies you want in your food.
