Happy Monday!

I made us one of those annoying trendy salads that has vitamins and stuff.

Then I served it to totes meat + potato loving friends, and they devoured it. 

So, it was a success.  

I made this last night (please be impressed at this fast turnaround) for our bff’s Wes and Sangeeta along with some pasta that I’ll show you later.  Jay and Wes had been golfing all day (and drinking…..lots of drinking….), so I used the afternoon to test some new recipes.  This one turned out REALLY well.  

I’d seen raw kale salads in magazines and online, but was sort of wary because…kale isn’t like lettuce?  I was worried it would be tough or woody or something.  But REALLY, it wasn’t.  The dressing for this is great too – it doesn’t taste Mexican at all, so don’t worry about that.  It just tastes REALLY flavorful.  I’m going to stop writing REALLY in all caps now.

The Easiest Monday Food

This weekend I was really lucky to have an impromptu family reunion with my dad’s side of the family in Durham, NC.

More on that later, promise.  It was a good one. 

Anyway, during the course of the weekend my cousins told me that they read this here little blog, but can’t cook.  My cute cousin Clare admitted that she recently set her kitchen on trying to make boxed pasta salad so…..that’s not good.  They’re my blood, and we need to fix this.

So, I promised that we would showcase a few easy-peasy recipes here today that even the flaming-kitchen cooks  could handle. These recipes are fast, easy, and foolproof.

Vegan Dish of the Week – Tahini Pasta

GUYS I MADE PASTA AND IT TASTED LIKE HUMMUS ON NOODLES.

And Jay has eaten leftovers gleefully almost every day for lunch this week.Serve topped with extra paprika

This is SO good.  I thought of it last week when we did our whole vegan shenanigan, and I really like the idea of giving you guys and my gut a vegan recipe every once in awhile.

Hummus is one of those things that’s always touted as naturally vegan without any modifications so I thought….why not make the flavors of hummus coat a pasta?  And why not stir some mint into that?

I did it, and it was REALLY good.  It was raining on this particular day, so the photo gods weren’t exactly on my side.  We watched Argo while we ate it, too, and I’d HIGHLY recommend that flick to anyone who lives under a rock like we do and hasn’t seen it yet.

Health Kick – Baked Chicken Parmesan

Well.  It’s Monday.

I had a work event last night and it basically rained all weekend so….LUCKILY it’s sunny now while I’m inside?

The good news is that Jay’s home for a week before leaving for another week (new job.  lots of travel.  boo.), so we’re having fun being together and liking each other.  Absence made made our hearts fonder or something.

So, this chicken.  I had to wait until after vegan week to show it to you because, clearly, it’s not vegan. 

It is, however, nice and light compared to regular fried chicken parm, and it’s hugely flavorful.  

PLUS.  It’s got bread coating so…you can kind of get away with eating it with just a salad and still feel carbed-up without eating pasta?  

You’ll love this.  Promise.

Lemon Artichoke Risotto – Vegan!

Guys.

I know I talked yesterday about how risotto is, like, so totally easy to make vegan, blah blah blah, but I was so serious about it that I wanted you have a new version to try out.Small ramekin of risotto

Also.  I tried tofutti!  You know that stuff that’s made with soy but tastes like cream cheese?  I bought some so that I could try it and report back to you.  

Verdict coming later. 

First, though, risotto.  It’s SO simple, but the flavor is REALLY intensely lemon.  The key is to use lots of zest but put it in right at the very end so that you don’t lose the flavor while the rice cooks.

Vegan Asian-Style Quinoa with Tofu

This has got to be low carb too, yes?

Yes.  Let’s just go with it.

This is delicious, kids.  Yesterday after I introduced the whole vegan-week thing (thanks for the lovely response to that!), I got to thinking about what I could make vegan.  It was HARD.  My go-to flavor components are cheese and butter so…YEAH.  About that.

The more I pondered, the more I realized that a LOT of Asian-style dishes are already vegan, or very close to it.  There isn’t a ton of random animal-derived junk to contend with replacing, and minus a few fish-based ingredients which can be eliminated easily, there are TONS of major flavors in Asian-style cooking that are totally plant based. 

So, that’s what’s up first.  Asian-style quinoa with raw veggies and crispy tofu.

I KNOW.  It doesn’t sound contrived.  It sounds just like….something I would already eat?  That’s the point – not to fake out anyone, not to hide crap and call it meat when it’s really…not…but to eat real, fresh food that tastes GREAT and just happens to be vegan.

Vegan Week

I know, blegh, right?

No.  Not right.  Vegan food can be delicious!

This weekend in NYC I saw one of my best friends from college, Lauren.  She recently has undergone some healthier-lifestyle changes, and one of them is eating vegan whenever she can.  She went on and on about how she felt great, and she LOOKED really great. 

I’d been thinking about sharing some vegan ideas with you for some time, so this seemed like a great opportunity!  

To be clear, I don’t necessarily advocate for a totally vegan diet.  I think that it can be really challenging to get the right mix of proteins that can be easily attained from consuming animal products, and malnutrition can sneak up on folks who try this eating style really quickly.  

That being said, vegan meals a few times a week can be GREAT- like a cleanse, but not in a moronic way.

Not that cleanses aren’t great….they just aren’t for me.

Easy Portobello Burgers

I made us bello-burgers!

Because it’s the weekend, and because we had cheeseburger quinoa yesterday, and because I love you. 

Portobella Burger

You’ve had a portobello burger, right?  A big ol’ mushroom grilled on a bun, pretending to be meat?

I can actually say that I don’t think I’ve ever had one, besides this.  I love mushrooms, but somehow it hadn’t happened for me yet. 

So, I found these lovely portobellos at Aldi, my favorite discount grocery store.  Local?  NO.  Affordable?  YES.  So….I go there.  Jay hates mushrooms, but I wanted to use these in their pure, unadulterated form so…

Portobello Burgers!  It’s what was for dinner.
