I’m at a loss, and it’s happened before!  Super clean break, so much that sometimes, if I don’t notice the glass ring in the sink, I don’t find out that the glass is broken until it’s WAY too late.

Yesterday, we made a sweet-ass broccoli salad that is just TOO delicious.

Also during that time we made a cup of flavored olive oil, which you did NOT need for the recipe.

So, what to do with the leftover oil?  You can’t throw it away!  It’s so garlicky and delicious!

Tonight is probably a good night to make a crap ton of rice and fry it, don’t you think?

Here’s how I do it when I make mine!

You can use anything you need to get rid of, and it’s so delicious!

One time, I go a little nuts and made an Italian version with spinach, crumbled cooked sausage, and fresh chopped tomatoes.

WHOA.  That was good.

An Asian-style is lovely too, though, and can be altered any way you like!

It’s good, is what I’m saying.

Weekend Idea – Antipasto Quesadillas

Happy Friday, everyone!

It’s going to be super duper lovely in our area this weekend, and I do not think that ANYONE should slave away in the kitchen when the weather is nice outside.

Unless, of course, you want to.

It’s up to you!

Here’s an idea for a fun weekend gathering of family and friends with ZERO effort:

antipasto quesadillas

How fun!

You can do these in a self-serve style, and keep a few pans warm on the oven.  Then, as people assemble their quesadillas, you can quickly grill them until they’re melted!

Some fillings that you could offer:

  • grated cheese (duh)
  • sliced deli meats
  • olives
  • capers
  • chopped pickles
  • fresh herbs
  • chopped canned artichokes
  • toasted nuts
  • chopped onions, cucumbers, and tomatoes

Anything you can think of would be delicious, and you can mix and match flavors to make so many delicious options!

There’s no need for a dipping sauce unless you’re just dying to make one.  Serve these with small tortillas so people can make 2 or three – they’ll want to!

Have each person grab some tortillas and then put their chosen toppings in a small dish, then plop the tortilla in a pan, followed by toppings and cheese, then another tortilla.  Spray some cooking spray in the pan and on the top tortilla, then let the cheese melt, flip the quesadilla, and serve!

Fun.  Easy.  Cheap.  GO!

Lasagna Two Ways

Yum yum yum YUM!

Nothing is better on a weekend than a simple, delicious Italian/American meal, and you should DEFINITELY not be spending your dollars on Stoufers or anything else packed with chemicals!

I made these lasagnas a few weeks ago when my whole family was gathering for my great-grandfather’s funeral.

Why do people eat so much when people die?  I have no idea.

Anyway, we had a wonderful time sharing memories, laughing, crying, and enjoying cousins that we rarely see.  Having the meal fully prepared (besides cooking) the night before was just an added bonus!

Weeknight Dinner – Pasta and Veggies

One of my favorite pasta dishes is SO simple and perfect for this time of year.  If you’re having a hard time figuring out what to make tonight, why not make this delicious sage-prosciutto pasta?

The picture above has the pasta with fish, but I’d make it even healthier by omitting a big protein (we all eat too much anyway in this country) and adding a salad or roasted broccoli.  Easy, delicious, and healthy.  Perfect for a Thursday!
