Broiled Fish with Salsa

WELL. 

I thought you might need something to go with the ever-so-slightly-decadent rice from yesterday so…..I made us a really light healthy fish!Meal with lime

If I were you I’d OF COURSE serve the two together, but this fish by itself is really nice and light so….I guess you could serve it with veggies or something like that if you’re feeling healthy.

What’s that like, by the way?

So, you can tell from the pictures that I made this on the same night as that lovely green baked rice, and this fish was GOOD.  It was incredibly simple and came entirely from ingredients I already had at home.  Also, once the fish thawed it took ten minutes so…never a bad thing.

Cheesy Baked Chile Rice

Ohhhhhhhh this is comfort food but it tastes like Mexican food and it’s so easy and you can make it ahead and it’s vegetarian but hearty and filling and cheesy. 

It’s great for a Monday, is what that should tell you.Broiled casserold topped with scallion

This rice is all of the things. 

Also, how was your weekend?  Mine was kind of …. rained out.  I had 93737 fun things planned for the sunshine, and then there wasn’t any so….whomp whomp.  

We DID, however, celebrate a full year in our house!  I did 3 loads of laundry to celebrate.  Cool, huh?

The Easiest Monday Food

This weekend I was really lucky to have an impromptu family reunion with my dad’s side of the family in Durham, NC.

More on that later, promise.  It was a good one. 

Anyway, during the course of the weekend my cousins told me that they read this here little blog, but can’t cook.  My cute cousin Clare admitted that she recently set her kitchen on trying to make boxed pasta salad so…..that’s not good.  They’re my blood, and we need to fix this.

So, I promised that we would showcase a few easy-peasy recipes here today that even the flaming-kitchen cooks  could handle. These recipes are fast, easy, and foolproof.

Vegan Banana Ice Cream 2 Ways

I made us ice cream.

It was my first time.  It was good.  

Ew.  Sorry.

ANYWAY.  I just really couldn’t figure out anything better to make for our last day of Vegan Week besides dessert.  It’s been a great week!  I have lots more vegan ideas for us, so this is definitely not a one-time thing.

The ice cream, though.  You’ve heard about this, yes?  There’s ONE ingredient.  It’s bananas.  The ingredient, not the feeling of making the ice cream. Spoon in ice

You blend it up, and BAM.  Ice cream.  Something about the composition of the fruit makes the pureed product really light and airy, like it’s been whipped, and you can’t tell that there’s no cream or other additions in it. 

I added some flavorings because I felt like it, but the plain version was delicious too.  Ice cream for breakfast!

Italian-Style Stuffed Peppers with Turkey

So, a week or so I told you on Facebook that I had some freezer-burned turkey that needed to be eaten ASAP. 

A lot of you helpfully told me to toss it out, which was hilarious.  You clearly don’t know me very well.  

Serve on a white plate for contrast

Freezer burned or death!

Or something like that.  I don’t like to throw away food, is what I’m trying to say.  So, I started pondering on what one could do with sub-par meat.  Jay suggested stuffed peppers, which cracked me up because I feel like we make them all the time – evidenced here, here, and here.

Yum.

I made this here crispy fish for you guys last week – remember?   

Top with extra tartar

It was so simple and wonderful yet healthier than fried fish – not that that’s EVER a bad thing. 

I also made dinner with the same fish.  It was so simple and fresh and lovely and flavorful.  

Plate with potatoes and spinach

Fish with this homemade tartar sauce and wilted spinach and baby potatoes.  Basically, I’ll eat anything with the sauce but we particularly loved this dinner combination. 

You should probably make it for dinner tonight, is what I’m saying.

Lemon Shrimp

Well, it is gross here.

It was beautiful ALL weekend, and of course I was inside doing yoga school.  Then today it’s cold and rainy and my throat hurts.

I MISSED SPRING. 

Serve with anything

Not really, I’m just being obnoxious. 

Anyway. This shrimp.  It’s buttery, it has a lovely sauce, and it has 5 ingredients. It’ll be done in 15 minutes or less, too, so that’s always a plus!

The flavor is perfect for a fancy-ish dinner, but the simplicity of these bad boys makes them PERFECT for a Monday.  

Trust me.  Go for it.

Crispy Shrimp

Pile of delicious shrimpWell, this is dumb.

It’s another zero-effort, super fast shrimp dish.  Like this hibachi recipe that you crazies just can’t get enough of.

So, maybe not such a bad thing?

Also, this shrimp isn’t necessarily Asian-tasting.  Also, this shrimp is super lightly fried without the effort of actually frying anything.

ALSO.  4 ingredients.  Seriously.

Carrot Cheddar Soup

I got something in my eye.

I’m not sure at this point if it’s pinkeye, irritation due to contact wearing, something really cool that I don’t even know about yet, or just mutiny of every blood vessel in one eye for staring at a computer all day every day.

I am sure, that it hurts.  In a way that has me swearing every 5 minutes.  In a way that requires REST from getting dressed, doing work, or looking at anything that isn’t, well, black.

It’s a good day, is what I mean.

On good days like this one, I need comfort food.  For me, cheese is comforting.  Is it for you too?  It’s also moderately cold here, which means that it’s already sunshiny (eff my eye, that sh*t hurts) and will reach 60 in a matter of hours.  Not that I can enjoy it, but this morning it was, like, 43.  So we need soup.  With cheese.
