Cozy Sausage Pasta

I know I’ve been telling you that on Labor Day weekend we went to the mountains and ate here and also made this for breakfast and it was wonderful and fabulous.

I haven’t shown you any pictures, and I’m super sorry about that.

I will soon, though!

Anyway. Also while we were in the mountains, we ate THIS.  OMG it was good, and cozy, and delicious, and spicy, and wonderful.

It’s great for this time of year when it’s just starting to get cold and you’ve about had it with pasta primavera.

Well, I never have had it with pasta primavera, but you get the point.

Spinach Artichoke Toasts

You know spinach artichoke dip?

This is like that.

Minus any mayo.

Plus garlic.

We made these a few weeks ago for my sister Olivia’s girlfriend Katie’s graduation party, which was super duper fun and also involved grilled tofu because Katie’s a weird vegetarian and I’m a weird lover of non-meat foods.

These were delicious!

Weeknight Entertaining! Quick and Easy

It’s spring break for Greenville County Schools this week!

That means nothing for us, but it’s also Easter week, which means that lots of people are travelling.  If you’re NOT off work, you might still like to have some people over for dinner without breaking the bank on ingredients or breaking your back to get dinner on the table!

Here’s what I’d suggest for a great, easy, affordable meal to serve to your easter bunnies this week:

Pork with tomato cream sauce, mashed cauliflower, salad, and bread.

First, make the fastest vinaigrette ever to go over any veggies, greens, or salad mix-ins you have.  Anything works!  If you don’t have any dijon, don’t worry:  just use oil, salt, pepper, garlic, and citrus juice or vinegar – whatever you have!

While you’re getting the salad together, start some cauliflower and let it steam while you get the rest of the meal ready, then mash it all at once to serve with your pork!

After you start your cauliflower start some garlic bread too – it can warm in the oven while the cauliflower cooks, the vinaigrette marries, and you get the meat ready!

Now, get some meat (I like pork chops, but chicken or fish would work great) seared in salt an pepper and make a quick and easy tomato cream sauce!

Finally, toss your salad (um.), get the bread out of the oven, mash the cauliflower, and SERVE!

You could probably make this dinner in 45 minutes with some time to yell at your dog and drink 5 glasses of boxed wine.

Perfect for family time!

Lasagna Two Ways

Yum yum yum YUM!

Nothing is better on a weekend than a simple, delicious Italian/American meal, and you should DEFINITELY not be spending your dollars on Stoufers or anything else packed with chemicals!

I made these lasagnas a few weeks ago when my whole family was gathering for my great-grandfather’s funeral.

Why do people eat so much when people die?  I have no idea.

Anyway, we had a wonderful time sharing memories, laughing, crying, and enjoying cousins that we rarely see.  Having the meal fully prepared (besides cooking) the night before was just an added bonus!

Easy, Elegant, and Garlic Free – Valentine’s Dinner Suggestion!

As we discussed earlier today, I’m missing meat just a wee bit.  I’m loving all the fish and tofu and cheese that we’re eating, but there’s just something about a steak that’s SO good, huh?

This was the last meat-inclusive meal Jay and I ate before we gave up meat for a month starting two weeks ago.  It was fabulous and SO easy, and I’d highly recommend that you consider making this next week for anyone you consider nice enough to be your Valentine.  Why not your mom?  She birthed you, so she probably deserves it.

I love having people over on weeknights.  It’s wonderful to break up the week with friends, laughter, and great food.

But, it stinks to race home from work, clean, cook, and try to look presentable in the 36 seconds between work and when your guests arrive.

(we) Let Them Eat Curry

Happy Sunday!  Our friends Katie and Tony came to spend the weekend in Greenville, and we had a blast!  We had such a great time showing them the area, laughing, and hearing stories about Jay as a comedian before I knew him!

We made curry last night, and MAN it was good.  This is a GREAT Sunday evening recipe because it can simmer all day and you’ll have leftovers to take for lunch this week!

Check out the recipe here, and make some curry for your family tonight!  Don’t forget, you can leave out the chicken and put any veggies you’d like in for a delicious vegetarian meal.
