Apple Mustard Slaw {vegan}

A few weeks ago our neighbor and friend became an American citizen.  He’s English but married to an American, and so we threw a party involving gun magazines, fanny packs, and all kinds of tacky-as-hell American flag nonsense.  It was kind of amazing, and of course American food was on the menu.  Cheez-Its were practically the main course.  

Now, I don’t know if slaw is necessarily American originally, but it sure as heck feels like a native food at this point.  Plus, it’s easy to make and can be a healthy side dish alternative for this time of year when grilling out is starting to happen a lot.  On this particular night we ended up with about 5 starchy side dishes (ain’t nothing wrong with that), so this was a nice light addition to the mix.  Plus – the apple + grainy mustard is a combination I have a feeling I’m going to be using a LOT this year.  It was really delicious and there were zero leftovers of this dish, which I think speaks volumes about slaw, which is sometimes more of an afterthought.

Guys.  It’s a short week!

Whole Salad

Thank GEE, amirite?  We’re having an insane 4 days until then, and Thursday evening can’t come soon enough.  Our major plans for the weekend include MAKING NO PLANS, so that probably means that we’ll end up cooking a lot at home and finding some friends and family to hang out with.  Fun!  Fun?  

Fun.  

Whether or not you’re doing anything official this weekend, it’s still fun to have some flag-colored food, don’t you think?  I do.  Nothing wrong with a white sheet cake decorated like a flag, of course, but here are some other, slightly more creative ways to incorporate Old Glory into your menu this weekend.

It’s Monday of a short week!

So….it’s basically Wednesday today!

That is GREAT news.  

Also.  It was a great weekend.  I tried on my wedding dress 10 minutes after hot yoga (and after a shower, calm down), so now it’s fully prepared for how much I sweat.  All the time.  The dress survived, so…we’re pretty much set for a nice day of stress and sweat together in August.Shrimp piled up

I’ll wait a minute while you finish being disgusted.  

There are 40 days until our wedding, and Jay got back from his SURPRISE BACHELOR PARTY last night!  I’ve been waiting to tell you about that FOREVER,  and I promise I will soon. 

While Jay was away, I made patriotic food.  Seriously.  Tons of new recipes that look like a flag or something like that.  Dorky?  Fine.  Delicious?  YES.
