Health Kick – Baked Chicken Parmesan

Well.  It’s Monday.

I had a work event last night and it basically rained all weekend so….LUCKILY it’s sunny now while I’m inside?

Awesome. Slice and serve with marinara

The good news is that Jay’s home for a week before leaving for another week (new job.  lots of travel.  boo.), so we’re having fun being together and liking each other.  Absence made made our hearts fonder or something.

So, this chicken.  I had to wait until after vegan week to show it to you because, clearly, it’s not vegan. 

It is, however, nice and light compared to regular fried chicken parm, and it’s hugely flavorful.  

PLUS.  It’s got bread coating so…you can kind of get away with eating it with just a salad and still feel carbed-up without eating pasta?  

You’ll love this.  Promise.

Yum.

I made this here crispy fish for you guys last week – remember?   

Top with extra tartar

It was so simple and wonderful yet healthier than fried fish – not that that’s EVER a bad thing. 

I also made dinner with the same fish.  It was so simple and fresh and lovely and flavorful.  

Plate with potatoes and spinach

Fish with this homemade tartar sauce and wilted spinach and baby potatoes.  Basically, I’ll eat anything with the sauce but we particularly loved this dinner combination. 

You should probably make it for dinner tonight, is what I’m saying.

Um, I ate like crap this weekend.

It was so delicious, all of it, but it was total crap.

The problem, you see, is that when I cater a lot for other people I have no desire to cook for myself.   I have a desire to have someone serve me in a restaurant, and so I ate lots of delicious crappy restaurant food.

Sorry, it’s true.  It’s healthier to cook at home.

So, last weekend Jay went out of town and I had no plans.

And I didn’t make any plans.

And then, I had lunch with my girlfriends on Friday afternoon that ended with a wee bit of a buzz.  Whatever.

Then, I got home and only left the house to practice yoga for the next three days.

I slept a lot.

I ate a lot.

I cooked a ton.

I barely spoke to anyone.

This was one of the things I made!

Happy Sunday!  Our friends Katie and Tony came to spend the weekend in Greenville, and we had a blast!  We had such a great time showing them the area, laughing, and hearing stories about Jay as a comedian before I knew him!

We made curry last night, and MAN it was good.  This is a GREAT Sunday evening recipe because it can simmer all day and you’ll have leftovers to take for lunch this week!

Check out the recipe here, and make some curry for your family tonight!  Don’t forget, you can leave out the chicken and put any veggies you’d like in for a delicious vegetarian meal.

Remember awhile ago when I told you about the goat cheese flatbreads that I made for Jay a long time ago that he loves and I love and we all love?

You can read about it here if you haven’t memorized all my recipes yet.

Those flatbreads are fabulous, and can be topped in SO many ways.  Here are just a few ideas I have for toppings and calorie reduction that are delicious, simple, and healthy!
