The Easiest Monday Food

This weekend I was really lucky to have an impromptu family reunion with my dad’s side of the family in Durham, NC.

More on that later, promise.  It was a good one. 

Anyway, during the course of the weekend my cousins told me that they read this here little blog, but can’t cook.  My cute cousin Clare admitted that she recently set her kitchen on trying to make boxed pasta salad so…..that’s not good.  They’re my blood, and we need to fix this.

So, I promised that we would showcase a few easy-peasy recipes here today that even the flaming-kitchen cooks  could handle. These recipes are fast, easy, and foolproof.

Mashed Turnips with Sage/Brown Butter

It’s a 20 minute side dish!

Less, if you play your cards right.

Spoonful of turnips

These are turnips, friends.  Friends, meet turnips.  They’re delicious, cheap, and underused.  You’re going to want to try them ASAP. 

Also, I’ve learned via the Google Machine that they contain about one third the calories of potatoes.  They’re a good source of fiber and vitamin C, too!  So….we should learn to love them, yes?  YES.  

These are mashed, and simple, and lovely.  The secret is cooking them in milk, which makes a really nice creamy texture when served.  Brown butter and crispy sage over the top well…..I gotta be me.

Easy Portobello Burgers

I made us bello-burgers!

Because it’s the weekend, and because we had cheeseburger quinoa yesterday, and because I love you. 

Portobella Burger

You’ve had a portobello burger, right?  A big ol’ mushroom grilled on a bun, pretending to be meat?

I can actually say that I don’t think I’ve ever had one, besides this.  I love mushrooms, but somehow it hadn’t happened for me yet. 

So, I found these lovely portobellos at Aldi, my favorite discount grocery store.  Local?  NO.  Affordable?  YES.  So….I go there.  Jay hates mushrooms, but I wanted to use these in their pure, unadulterated form so…

Portobello Burgers!  It’s what was for dinner.

Cheeseburger Quinoa

Yep.  

I know.  

I’m baffled too.

So what happened was this.  I spent the whole weekend (like, 15 hours) in my yoga glass, then we studied ayurvedic constitutions for 3 of those hours and ate all this fun vegetarian food that was totally delicious, then I wanted to grill out but not eat meat, but I wanted to eat bacon.

SO.  We grilled out.  And as a side dish I made this, which could really be a meal, because it has veggies and carbs and protein.  It’s quinoa stuffed with bacon cheeseburger ingredients minus the beef.  It was AWESOME.  Really yummy and satisfying but obviously so much healthier than a burger.

Crispy Baked Fish

You did think that I made this here tartar sauce just for…..fun….did you?

No. I did not.  I made it to go with fish!

Serve fish with tartar sauce

Duh. 

This fish is 1. good, 2. easy, and 3. good for you, until it’s drenched in tartar sauce, and then we’re back to 1. 

Who cares, though?  All fish is healthy.  The end.

Homemade Tartar Sauce

Yum.

I have a thing for condiments, did you know that?

Serve in small bowl

Like…have you noticed every time we make pasta I suggest you top it with parsley, sea salt, crushed red pepper, parmesan, and good olive oil?  That’s five toppings.  And I ROUTINELY put that many things on my food. 

It’s a bit silly, maybe, but I gotta be me. 

To that point, though, it’s often much healthier and cheaper to make your own sauces and dips, like this one!

Tartar sauce.  It can be so good, or just absolutely wretched, in my opinion.   Tons of mayo mixed with sweet relish is NOT my idea of a good condiment, thank you very much.  This, though, is like….ranch with extra herbs mixed with a leeeetle bit of tartar sauce. It’s good, kids, is what I’m trying to say.

Fast + Healthy Tuesday Night Dinner

Everyone has to eating dinner, right?

I do.

Sometimes, though, I’m really freaking hungry and really freaking lazy all at the same time and it’s so hard to motivate myself to make dinner but I know I should because eating out isn’t healthy or budget-friendly but IDON’TWANNACOOK so….

…it’s an internal battle.

When that happens, I need fast, easy things that aren’t going to take too much brain power to get on the table.

Let’s make a meal like that tonight, ok?  Fish with Lemon Caper sauce, Quinoa with veggies, and an easy salad.  Here’s the game plan:

I’ve told you about something similar to this before, but they were so dang spicy they burned my mouth.

These are easier.  These are milder.  These are healthier.

You’ll love them!  Fresh green beans stir friend so quickly, then tossed with garlic and a really light brown sauce.

They’re so easy, in fact, that I didn’t bother with process pictures.  You’re an adult.  Picture it in your head.

The Easiest Food to Cook

Ahhhhhh Wednesday.

This morning I practiced yoga and strained my boob.

Pectoralis minor, I think, but mainly my boob.  Ouch.  Since I’m under 30 and don’t abuse drugs I don’t think I’m having a heart attack, but it could be that, too.  Also today I have a meeting about some yoga teaching, regular work, a board meeting, winter social, and dinner with Jay’s family.

I’m the only one who’s this busy, right?

HA. Not even a little bit, I’d guess.

On days weeks months like this, sometimes you don’t have the pre-washed, pre-cut veggies in the fridge for quick cooking like you should.   Sometimes you haven’t frozen tons of pasta sauces for lazy nights, and you don’t have salad dressing in your fridge.

Sometimes you need things with NOTHING prepped that you can still cook really quickly.
