Meal Prep Quiche

Hello and welcome to the middle weeks!

There is still school. There are still chores. We’re still working. But we’re in the MOOD for holiday stuff, right? It’s busier, there are more activities, more opportunities to not keep up the great habits we’ve spent all year building. Meal prep quiche is here to save us from takeout temptation.

This is another version of my absolute favorite quiche that I shared several weeks ago – the Kale Roasted Red Pepper Quiche that dreams are made of. Here, we haveĀ optionsĀ because we need our quiche to be exactly how we want it every single time. Meal prep quiche is the best kind of quiche, basically.

Kale and Red Pepper Quiche {vegetarian}

Mmmmm, HELLO. 

I shared last weekend that I made a bunch of quiches for a family gathering, and, not to toot my own horn, but they were suuuuuuper yum. I’m a sucker for a good quiche. The creamy eggy cheesy filling, some add-ins to make it your own, flaky buttery crust? All good things, yes they are. 

My favorite quiche base recipe comes from my brother-in-law, Joe. I change the fillings and cheese every time based on who I’m serving and what I feel like, but the measurements stay the same and the possibilities are endless. 

This particular super easy quiche features chopped kale, roasted red peppers, and crumbled feta. Nothing needs to be cooked in advance and the peppers come from a jar, so effort is minimal while the resulting quiche is nearly perfect.

I don’t actually hate cooking entire meals on the weeknights. I find it relaxing to put our kids to bed, chat with Jay, and make an entire meal start to finish.

Buthoweveralso, when I do that it means that we eat dinner at 9pm and then don’t go to bed until 11, and that’s not OK. SO, I mostly prep some things and then cook one or two items when we’re ready to eat.

Toddler Feeding Strategies + Favorite Foods

It’s a kid food day! Feeding Beck is something I get in a rut with every once in awhile, and it kind of goes one of two ways. One, she eats a few healthy things so that’s all I give her because then she’s getting produce and protein and things that I’m cool with BUT not trying lots/any new things. Then we have part two where we have a ton of fun things or busy things and she eats pizza for five days straight because it’s quick and her favorite food.

Obviously one of those items is prooooobably preferable, but pizza is also a winner on an emotional level, there’s no denying that. We’ve been working with Beck more on eating all at once (she’s the queen of saying she needs to color in between bites or other silly but cute things), eating produce first, and trying new things even if she’s pretty sure she won’t like them.
