Ohhhhhh I’ve been waiting for A LONG TIME to tell you about this!

There’s a story here. 

Top of one bowl

I had some goat cheese.  One of those regular little logs that are vac-sealed and thank goodness last awhile in the fridge so it wasn’t going bad like the rest of my cheeses?  

One of those.  I bought it and then realized I had no clue what to do with it, but I totally love goat cheese so….I thought of pasta.  With lemon.  Coated in goat cheese. 

I wrote it on my “don’t forget to cook this” whiteboard (yep, it’s a thing), and then my friends Wes and Sangeeta saw it and demanded that when I made goat cheese pasta they were invited.  So.  We invited them over.  And ate goat cheese pasta.

It’s also 3 months before I get married. Serve with extra lemon wedges

It’s also the day Jay comes back from a week away for work.  We’re meeting in the mountains with our BFFs and are going to galavant all weekend. 

I’m making lamb.

Before that, though, we need to indulge in our most recent vegan recipe, dontcha think? 

This one was GOOD, guys.  Incredibly easy because it’s raw (duh, it’s pesto), and FULL of flavor.  I love the flavor of raw asparagus, and find it widely underused.

Vegan Dish of the Week – Tahini Pasta

GUYS I MADE PASTA AND IT TASTED LIKE HUMMUS ON NOODLES.

And Jay has eaten leftovers gleefully almost every day for lunch this week.Serve topped with extra paprika

This is SO good.  I thought of it last week when we did our whole vegan shenanigan, and I really like the idea of giving you guys and my gut a vegan recipe every once in awhile.

Hummus is one of those things that’s always touted as naturally vegan without any modifications so I thought….why not make the flavors of hummus coat a pasta?  And why not stir some mint into that?

I did it, and it was REALLY good.  It was raining on this particular day, so the photo gods weren’t exactly on my side.  We watched Argo while we ate it, too, and I’d HIGHLY recommend that flick to anyone who lives under a rock like we do and hasn’t seen it yet.

Smoky + Spicy Shredded Chicken Pasta

It’s MONDAY!  

Hurray.  Are you still off work?  Did you have a nice holiday weekend?  Are you back in the office?

Sorry about that. 

The good news about today is that I have lots of new food to show you, starting with this pasta.  I made it for dinner on Friday night, and we loved it.  Basically, it’s regular tomato sauce amped up with a few extra veggies and shredded chicken, but what REALLY makes it is smoked paprika and smoky fire-roasted tomatoes.  The sauce is juuuuust different enough to be really special, but it’s still just as easy as making regular spaghetti.  

Trust me.  You’ll love it!

I hope you had a great weekend.  I didn’t sleep nearly enough, but I saw lots of people that I love so it was kind of worth it.  I saw my uncles and grandfather, too, and that was super fun.

This pasta, guys.  I can’t even tell you.  It takes 20 minutes to make, is great with ANY veggies, and has this FLAVOR that you just won’t believe.

It’s just so easy.  And delicious.  And everyone likes it.

Arugula Pesto with Jalapeno and Pumpkin Seeds

This is amazing.

I love pesto of all kinds – jarred sundried tomato, fresh with basil, drizzled over fish…all of it.  There’s something about herbs and cheese that just gets me every time.

This is SUPER lovely.  The bite of the arugula with fresh jalapeno?  Amazing.  Then, we add the regular garlic/cheese/olive oil combo and some toasted pumpkin seeds to round everything out.

Pesto is nice as a make-ahead, too.  You make the pesto a few days in advance, then just cook pasta and stir it all together when you want to eat.  Plus, a blender or food processor basically does the work for you SO you have no excuse to not make this IMMEDIATELY.

Easy Baked Ziti

You’re wondering what to do with all that delicious marinara we made yesterday, aren’t you?

Here it is, kids.

You could make ziti!  You could make a gazillion other things too, of course, but this is a GREAT one.  My version is vegetarian, and has FIVE ingredients if you have premade sauce on hand.  Also, three of the ingredients are cheese.

So…..it’s kind of foolproof.  Seriously.

This is great for this time of year because you can make one, cover it, keep it in the fridge for days or the freezer for months, then just bake it when you want to eat it!  You can also make it first thing in the morning and bake it when you’re ready for dinner….you get the picture.  It’s total make-ahead food.
