Broiled Fish with Salsa

WELL. 

I thought you might need something to go with the ever-so-slightly-decadent rice from yesterday so…..I made us a really light healthy fish!Meal with lime

If I were you I’d OF COURSE serve the two together, but this fish by itself is really nice and light so….I guess you could serve it with veggies or something like that if you’re feeling healthy.

What’s that like, by the way?

So, you can tell from the pictures that I made this on the same night as that lovely green baked rice, and this fish was GOOD.  It was incredibly simple and came entirely from ingredients I already had at home.  Also, once the fish thawed it took ten minutes so…never a bad thing.

Yum.

I made this here crispy fish for you guys last week – remember?   

Top with extra tartar

It was so simple and wonderful yet healthier than fried fish – not that that’s EVER a bad thing. 

I also made dinner with the same fish.  It was so simple and fresh and lovely and flavorful.  

Plate with potatoes and spinach

Fish with this homemade tartar sauce and wilted spinach and baby potatoes.  Basically, I’ll eat anything with the sauce but we particularly loved this dinner combination. 

You should probably make it for dinner tonight, is what I’m saying.

No. I did not.  I made it to go with fish!

Serve fish with tartar sauce

Duh. 

This fish is 1. good, 2. easy, and 3. good for you, until it’s drenched in tartar sauce, and then we’re back to 1. 

Who cares, though?  All fish is healthy.  The end.

Homemade Tartar Sauce

Yum.

I have a thing for condiments, did you know that?

Serve in small bowl

Like…have you noticed every time we make pasta I suggest you top it with parsley, sea salt, crushed red pepper, parmesan, and good olive oil?  That’s five toppings.  And I ROUTINELY put that many things on my food. 

It’s a bit silly, maybe, but I gotta be me. 

To that point, though, it’s often much healthier and cheaper to make your own sauces and dips, like this one!

Tartar sauce.  It can be so good, or just absolutely wretched, in my opinion.   Tons of mayo mixed with sweet relish is NOT my idea of a good condiment, thank you very much.  This, though, is like….ranch with extra herbs mixed with a leeeetle bit of tartar sauce. It’s good, kids, is what I’m trying to say.

Lemon Shrimp

Well, it is gross here.

It was beautiful ALL weekend, and of course I was inside doing yoga school.  Then today it’s cold and rainy and my throat hurts.

I MISSED SPRING. 

Serve with anything

Not really, I’m just being obnoxious. 

Anyway. This shrimp.  It’s buttery, it has a lovely sauce, and it has 5 ingredients. It’ll be done in 15 minutes or less, too, so that’s always a plus!

The flavor is perfect for a fancy-ish dinner, but the simplicity of these bad boys makes them PERFECT for a Monday.  

Trust me.  Go for it.

Crispy Fish with Spicy Spanish Tomato Sauce

Ugh, I don’t know what to call anything anymore.  So I’ll just spend a decade tell you about everything, mmkay?

Serve with extra peppers for spice

This is fish.  Fried SO lightly that it’s practically healthy.  Seriously.  Then it has a tomato sauce that is sweet and tangy and spicy.  It has 2 kinds of peppers and olives and onions and parsley and it is SO DANG GOOD. 

Seriously.  I made this then two days later made the exact same sauce and ate it over pasta.  So…there’s that.

You’re gonna wanna make this, though.  It’s just slightly different than a standard marinara, and SO good.  OH OH OH!  And you can print the recipe at the bottom of the post if you want.  Go look at it right now.  See?  SEE?  What do you think?  Is that good?  Helpful?  Please say yes.

Spicy Crab Salad (like in sushi!)

You know how at sushi restaurants sometimes they have Crab Salad rolls but really it’s just fake crab mixed with mayo?

And sometimes there are Spicy Crab rolls that really are just fake crab mixed with mayo and spicy stuff?

Welp, I have a confession.  I love crab salad.  And spicy crab salad.  And when either of those things are made into a sushi roll?  I’m a seriously happy human being.

Pile of delicious shrimpWell, this is dumb.

It’s another zero-effort, super fast shrimp dish.  Like this hibachi recipe that you crazies just can’t get enough of.

So, maybe not such a bad thing?

Also, this shrimp isn’t necessarily Asian-tasting.  Also, this shrimp is super lightly fried without the effort of actually frying anything.

You know what next week is?

It’s a day where we buy things for people we love, and single people pretend like having a significant other is the only way to feel love, which makes me feel sad, but I kind of get it because of all the commercials, and people eat food together.

That’s what your Valentine’s day looks like, right?

Mine actually started last night.  I cooked something yummy for you!  I’m gonna show it to you soon so you can plan to make it for your sweetie, or your mom, or your dog, or your friends.  Love can come from lots of places, people!

I think cooking on Valentine’s day is so fun.  First, you save money and irritation and time by avoiding restaurants.  Plus, it’s a nice gesture for people you love.  Plus, you can drink and not drive.

Last night it was like, definitely for sure going to snow, so we went out and drank a lot and ate a lot for dinner and then it didn’t snow.

Don’t worry, though, the local economy is better for it due to all the extra bread and milk sales.

Anyway, it’s super sunny and slightly cold, so we got all excited for nothing.  I like snow A LOT, so I’m super bummed.

Anyway.

You need to make this, guys.  Paella.  Rice cooked with veggies and seasonings with seafood and sausage topped with parsley and lemon and scallions.
