Philly Cheesesteak Stuffed Peppers

It’s a sandwich in a pepper, without bread which basically makes it a health food.  

The world makes sense again!  

Seriously.  Remember eons ago when I made the Philly mac+cheese combo and it was oh-so-good but, let’s be honest, not terribly healthy?  This is different!  It’s brown rice, ground beef, veg, spices, stuffed in a pepper.  Duh there’s cheese, but it’s really a nicely balance meal.  PLUS.  Make-ahead potential to the max.

Italian-Style Stuffed Peppers with Turkey

So, a week or so I told you on Facebook that I had some freezer-burned turkey that needed to be eaten ASAP. 

A lot of you helpfully told me to toss it out, which was hilarious.  You clearly don’t know me very well.  

Serve on a white plate for contrast

Freezer burned or death!

Or something like that.  I don’t like to throw away food, is what I’m trying to say.  So, I started pondering on what one could do with sub-par meat.  Jay suggested stuffed peppers, which cracked me up because I feel like we make them all the time – evidenced here, here, and here.

I want to eat Mexican food all the time. Is that so bad?

No, it’s not at all.

It’s the sour cream that gets me. I like it A LOT.

As a result, we eat Mexcan-style food at our house all the time.  You can go traditional, light, spicy, vegetarian…there are so many ways to mix it up!

So, tonight, I suggest that you make a Mexican-style meal of stuffed peppers, rice, and beans.
